2 avocados, sliced
1 tablespoon lime juice
Sour cream

Steps:

  • Preheat the oven to 400 degrees F.
  • Saute onion in hot oil in a 10-inch cast-iron skillet over medium-high heat 3 to 4 minutes or until tender. Stir in beans and next 8 ingredients. Bring to a boil; reduce heat and simmer, uncovered, 15 minutes.
  • Combine baking mix, egg, and milk in a medium bowl, stirring until smooth. Fold in 1/2 cup cheese and 1/4 cup cilantro; pour over simmering chicken mixture.
  • Bake for 20 minutes or until a wooden pick inserted in topping comes out clean. Sprinkle with remaining 1/2 cup cheese and remaining 1/4 cup cilantro. Sprinkle avocado slices with lime juice, and arrange over cobbler. Serve with sour cream.

Tips:

  • Use a variety of vegetables. This will add flavor, texture, and nutrients to your cobbler. Some good choices include corn, black beans, bell peppers, and onions.
  • Don't be afraid to spice it up. Tex-Mex cuisine is known for its bold flavors, so don't be shy with the spices. A good starting point is to use a tablespoon of chili powder, a teaspoon of cumin, and a half teaspoon of cayenne pepper. You can also add other spices to taste, such as garlic powder, onion powder, or paprika.
  • Use a good quality chicken. This will make a big difference in the flavor of your cobbler. Look for chicken that is free-range and organic, if possible.
  • Cook the chicken thoroughly. This is important for food safety and to ensure that the chicken is tender and juicy.
  • Don't overcook the cobbler. The chicken should be cooked through, but the vegetables should still have a little bit of crunch. Overcooking the cobbler will make it dry and tough.
  • Serve the cobbler immediately. This is when it is at its best. You can also store the cobbler in the refrigerator for up to 3 days, or in the freezer for up to 2 months.

Conclusion:

Spicy Tex-Mex Chicken Cobbler is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover chicken.
