Saw this on Everyday Italian and went out and got the ingredients right away because i saw it and was craving it. My boyfriend loves this too, he ate almost the whole batch of salad by himself. This recipe makes ALOT of dressing so you can probably use just half of what the recipe calls for or save the dressing to use on another batch of salad.

SPINACH AND MUSHROOMS SALAD WITH ORANGE VINAIGRETTE

Spinach and Mushrooms Salad with Orange Vinaigrette image

Categories     Salad     Mushroom     Quick & Easy     Orange     Spinach     Gourmet

Yield Serves 8

Number Of Ingredients 8

1 teaspoon freshly grated orange zest
2 tablespoons fresh orange juice
2 tablespoons fresh lemon juice
1 teaspoon Dijon-style mustard
3/4 teaspoon salt, or to taste
2/3 cup olive oil
2 pounds fresh spinach, coarse stems discarded and the leaves washed well, spun dry, and, if desired, torn into bite-size pieces
1/2 pounds mushrooms, sliced

Steps:

  • In a small bowl whisk together the zest, the juices, the mustard, and the salt, add the oil in a stream, whisking, and whisk the dressing until it is emulsified. In a large bowl toss the spinach and the mushrooms with the dressing.

Tips:

  • Prep greens thoroughly: Before assembling the salad, ensure that your spinach and arugula are well-washed and dried. This will prevent excess water from diluting the flavors of the dressing and wilting the greens.
  • Use fresh, ripe oranges: The quality of your oranges directly impacts the taste of your vinaigrette. Choose oranges that are heavy for their size, with bright, unblemished skin. Avoid any oranges with soft spots or bruises.
  • Make the dressing in advance: You can prepare the orange vinaigrette ahead of time and store it in the refrigerator for up to a week. This makes it a convenient option for busy weeknights or when entertaining guests.
  • Toss salad gently: When combining the greens and dressing, use a light hand to avoid bruising the delicate leaves. Gently toss the salad until the greens are evenly coated with the vinaigrette.
  • Serve immediately: Spinach and arugula salad is best enjoyed fresh, as the greens can wilt if left dressed for too long. Serve the salad as soon as it is assembled.

Conclusion:

Spinach and arugula salad with orange vinaigrette is a refreshing, flavorful, and nutritious dish perfect for any occasion. The combination of zesty oranges, tangy vinegar, and sweet honey creates a well-balanced dressing that complements the mild flavor of the greens. This salad is also incredibly versatile, as it can be customized with various toppings and ingredients to suit your taste preferences. Whether you're looking for a light lunch, a healthy side dish, or a crowd-pleasing appetizer, this spinach and arugula salad with orange vinaigrette is sure to impress.
