1 (10 ounce) package fresh spinach leaves
½ cup sour cream
½ cup shredded pepperjack cheese
4 cloves garlic, minced
4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
1 pinch ground black pepper
8 slices bacon

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place spinach in a large glass bowl, and heat in the microwave for 3 minutes, stirring every minute or so, or until wilted. Stir in sour cream, pepperjack cheese, and garlic.
  • Lay the chicken breasts out on a clean surface, and spoon some of the spinach mixture onto each one. Roll up chicken to enclose the spinach, then wrap each chicken breast with two slices of bacon. Secure with toothpicks, and arrange in a shallow baking dish.
  • Bake uncovered for 35 minutes in the preheated oven, then increase heat to 500 degrees F (260 degrees C), or use the oven's broiler to cook for an additional 5 to 10 minutes to brown the bacon.

8 slices bacon
4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 cup crumbled blue cheese
2 tablespoons all-purpose flour
⅛ teaspoon ground black pepper
¼ teaspoon salt
2 tablespoons olive oil

Steps:

  • Cook bacon until crisp. I prefer to use an indoor grill. Bacon can also be cooked in a skillet over medium-high heat, or the microwave at about 1 minute per slice. Drain on paper towels, and set aside.
  • Preheat the oven to 350 degrees F (175 degrees C). In a medium bowl, stir together the spinach and blue cheese. Crumble in the bacon, and stir to distribute.
  • Lay the chicken breast halves out on a clean surface, and distribute the spinach mixture evenly onto the centers of them. Fold the chicken over the filling, and secure with toothpicks. Stir together the flour, salt and pepper on a dinner plate. Roll the chicken in the flour to coat.
  • Heat the oil in a skillet over medium-high heat. Quickly brown each piece of chicken on top and bottom. Remove to a lightly greased baking dish, and cover with a lid or aluminum foil.

Sauteed Chicken Breast with Fresh Spinach Pasta image

3/4 pound fresh spinach linguine
4 (6-ounce each) chicken breasts
Salt and pepper to taste
2 tablespoons oil
4 tablespoons unsalted butter
1 small onion, minced
1 medium celery stalk, finely diced
1 small carrot, finely diced
Sprig of fresh rosemary or 1/4 teaspoon dried and crumbled
1 bay leaf
1/4 cup Madeira wine
1/4 cup chicken broth
1 cup heavy cream
2 tablespoons minced fresh herbs-(such as tarragon, chives, chervil or parsley)
Fresh lemon juice to taste

Steps:

  • Bring a large pot of salted water to a boil, add linguine and cook until a little less than al dente, about 8 minutes. Season chicken breasts with salt and pepper. Heat a deep skillet over medium-high heat. Add oil and 1 tablespoon of butter, heat until the butter is melted. Then add the chicken breasts, skin side down and cook for 2 to 3 minutes on each side, or until lightly colored.
  • When done, transfer chicken breasts to a plate and set aside. Discard any fat from your skillet. Now, to the skillet add 2 tablespoons of butter, heat until butter is melted. Add onion, celery, carrots and salt and pepper. Cook, stirring until vegetables are softened, about 3 minutes. Return chicken to the skillet, add rosemary, and bay leaf and cook, covered over moderately low heat for 5 minutes more or until chicken is cooked through but still slightly springy to the touch. Again, remove chicken from the skillet and transfer to a plate, pouring any remaining juice into the skillet and set aside. Now, prepare the sauce. To the same skillet add madeira and chicken broth, cook until reduced by half. Then add heavy cream and reduce until sauce is lightly thickened. Drain and pat dry linguine and transfer to a serving plate and toss with remaining tablespoon of butter. Top with chicken breasts. To the sauce add minced fresh herbs, taste for seasoning, adding salt, pepper and lemon juice to taste. Gently pour sauce over linguine and chicken, making sure to evenly coat the entire surface. Serve immediately.

Extra-virgin olive oil, for drizzling
4 tablespoons butter, divided
1/2 pound cremini mushrooms, sliced
4 boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
3/4 cup fresh ricotta or sheep's milk ricotta
1 box organic frozen spinach, defrosted, squeezed dry, and separated
Freshly grated nutmeg
4 slices speck or prosciutto
Flour, for dredging
2 cloves garlic, thinly sliced
1/2 cup marsala wine
1 1/2 cups chicken broth
A handful fresh flat-leaf parsley, finely chopped
Pine Nut Pilaf, for serving, recipe follows
2 tablespoons butter
1/2 cup orzo pasta
1/4 cup pine nuts
1 cup long grain rice
2 cups chicken stock

Steps:

  • Cut 4 long pieces of kitchen twine.
  • In a large skillet over medium-high heat, add a liberal drizzle of extra-virgin olive oil plus 2 tablespoons butter and saute the mushrooms for 8 to10 minute to darken.
  • Meanwhile, butterfly the chicken breasts open and pound them out very thin, no more than 1/8-inch thick. Season the chicken with salt and pepper and top each piece of chicken with 2 tablespoons ricotta cheese and spread it around. Top with 1/4 of the spinach and season with freshly grated nutmeg, salt and pepper. Then top each piece of chicken with a slice of speck. Roll the chicken into bundles and secure with twine. Season the bundles with salt and pepper and dredge lightly in flour.
  • Season the mushrooms with salt and pepper and remove to a plate. Add extra-virgin olive oil to coat the pan. Add the chicken and cook over medium-high heat for 15 minutes. Remove the chicken to a plate and cover with foil. Add the remaining 2 tablespoons of butter to the pan, sprinkle in 2 tablespoons flour, and deglaze the pan with marsala. Add the broth and cook to thicken, about 1 to 2 minutes, and then add the mushrooms to combine. Remove the string from the chicken and top with sauce. Serve with Pine Nut Pilaf.
  • Melt the butter in a saucepot over medium heat. Add the orzo and pine nuts and toast until golden. Add the rice and stir in the stock. Bring to a boil, reduce the heat to simmer, and cover. Cook for 18 minutes. Fluff with a fork and serve.

2 tablespoons olive oil, divided
3 ounces portabella mushrooms, sliced
4 ounces onions, diced

1/4 teaspoon dried thyme
1/4 teaspoon rosemary

1 egg, lightly beaten
1 tablespoon butter

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Heat 1 tablespoon of the olive oil. Saute mushrooms, onions, and garlic for 4 minutes. Add spinach and wine cook until wine is evaporated.

8 ounces large shrimp, peeled and deveined (4 to 6 shrimp per breast)

Steps:

  • Pound chicken breast to 1/2" thickness. Cut pocket in each, cutting almost to edge.

4 teaspoons extra virgin olive oil (optional)
1 cup breadcrumbs (optional)
2 cups rice, under-cooked (or use a package of seasoned flavored rice)
1/2 cup cheese, shredded (preferably a multi-cheese italian blend)
1/4 cup sour cream
1/4 cup cream cheese
1/4 cup fresh spinach, chopped
1 sprig fresh rosemary

Steps:

  • Prepare the rice until it is ALMOST done. This is the base for the stuffing, and will continue to cook as the chicken cooks.
  • Combine rice, cream cheese, and sour cream in a mixing bowl.
  • Add spinach and rosemary to the stuffing mixture.
  • Add cheese to the stuffing mixture LAST (the stuffing is warm and the cheese will melt).
  • Pound the chicken breasts with a tenderizer so that they are flattenned.
  • Scoop stuffing (as much as will practicably fit) onto the flattenned chicken breasts. Roll the chicken up and secure with toothpicks.
  • If you wish, coat each "roll" with olive oil and then with breadcrumbs.

1 lb boneless, skinless chicken breasts
4 oz pepper jack cheese, shredded (you can use up to 6 oz)
1 c frozen spinach, thawed and drained (you can also use fresh cooked spinach)
2 tbsp olive oil
2 tbsp Cajun seasoning - click here for my homemade Cajun spice recipe
1 tbsp breadcrumbs (I use Italian style)
Sea salt, to taste
Freshly ground black pepper, to taste
Lots of toothpicks

Steps:

  • Preheat oven to 350 degrees. Flatten the chicken to 1/4-inch thickness. In a medium bowl, combine the pepper jack cheese, spinach, salt and pepper. Combine the Cajun seasoning and breadcrumbs together in a small bowl. Spoon about 1/4 c of the spinach mixture onto each chicken breast. Roll each chicken breast tightly and fasten the seams with several toothpicks. I typically use about 8 toothpicks in each roll to ensure none of the filling seeps out. Be sure to count how many total toothpicks were used. Brush each chicken breast with the olive oil. Sprinkle the Cajun seasoning mixture evenly over all. Sprinkle any remaining spinach and cheese on top of chicken (optional). Place the chicken seam-side down onto a tin foil-lined baking sheet (for easy cleanup). This is a quick and easy meal for lunch or supper. Its healthy and tasty! I made it up one night for supper for me and my sister. It was really quick, tasty and not too filling, but just right. It is healthy and spinach actually has more nutrients than any other food! If you want it even healthier, try whole wheat noodles rather than white. I am not too fond of measurements so these are close but approximates, so feel free to adjust as necessary. Enjoy this simple meal as a light, healthy new recipe!

2 chicken breasts (thawed or fresh)
1 small garlic clove (smaller the better when serving only 2 people)
1/2 small onion
0.25 (10 ounce) package frozen chopped spinach (thawed enough to chop)
parmesan cheese (grated)
3 pinches tarragon
1 teaspoon lemon juice
fettuccine pasta (2 servings, Unless you want extra. Noodles of your choice)

Steps:

  • Put water in a medium/small pot on the stove and add noodles when the water comes to a boil.
  • Start frying the chicken breasts in a TBSP of oil (olive or your choice) as you cut the garlic and onions.

4 large chicken breasts
200 g Baby Spinach
300 g soft fresh goat cheese, all rind removed
8 teaspoons basil pesto (I use about 2 teaspoons per breast, or enough to cover breast completely.)
4 sun-dried tomatoes, in oil, drained
8 slices prosciutto
1 cup milk
1 teaspoon chicken stock powder
1 1/2 teaspoons cornflour
3 teaspoons Dijon mustard
2 tablespoons lemon juice
2 tablespoons dry white wine
1 tablespoon parsley, finely chopped
2 tablespoons cream
1 pinch cayenne
pepper

Steps:

  • Pound chicken breasts with a meat mallet until approximately the same thickness all over (about 1/4 inch.).
  • Boil spinach until tender, drain and squeeze out all excess water. In a bowl combine spinach with goats cheese until well mixed.
  • Spread 2 teaspoons pesto over the inside of each breast to cover completely. Spread spinach mix down the centre of each breast lengthwise. Cut each tomato into 4 slices and place slices on top of spinach to run the length of breast. (1 Tomato per breast.).
  • Fold breast over to cover filling and wrap 2 slices of prosciutto around each breast to secure.
  • Lightly oil the bottom of a baking dish and place breasts inside. Bake breast in pre-heated oven 180c for 45-50 Min's or until chicken is cooked through. (cooking times will vary according to the thickness of breast.).
  • For The Sauce:.
  • Heat milk and chicken stock in a saucepan, mix cornflour with a little water, add to milk stir until mixture thickens slightly.
  • Add Dijon, lemon juice and wine stir to combine, Add cream, cayenne, parsley and pepper to taste. Heat sauce over medium heat until sauce has thickened.
  • Note: You can leave sauce over a low heat, stirring from time to time, while chicken finishes cooking.
  • To serve: Slice chicken in half, plate and drizzle with sauce.

  • Remove each tendon from the chicken breasts. Cut each breast lengthwise into three fillets and slice those fillets horizontally, to give you six pieces from each breast.
  • If using fresh spinach, wash it thoroughly and cook until tender in a large pot with only the water that clings to it and a generous sprinkling of salt. If using frozen, thaw it and cook until tender with half a cup of water and a pinch of salt.
  • Put the chopped garlic and the olive oil in a saute pan over medium-high heat. When the garlic begins to sizzle, add plum tomatoes. Cook until the tomatoes have reduced so that they are no longer watery and have separated from the oil, about 15 minutes.
  • Add the cooked spinach to the tomatoes and stir for a minute or two. Turn the heat off and put aside for later.
  • Heat the vegetable oil and butter in a skillet over medium-high heat. When the butter foam begins to subside, saute the chicken fillets on both sides very briefly. They will be cooked in two minutes at most. After they are cooked, sprinkle with salt and pepper.
  • Reheat the tomato and spinach and add the cooked chicken. Toss the chicken until it is well coated with sauce and turn off the heat. Serve hot, followed by a salad.

4 boneless skinless chicken breasts
1 (10 ounce) package frozen chopped spinach
1 tablespoon sour cream
1 tablespoon cream cheese
1 teaspoon chopped garlic
4 slices bacon

Steps:

  • Preheat oven to 400.
  • Place each chicken breast between two pieces of plastic wrap or two thin cutting boards and pound to 1/4" thick.
  • Thaw the spinach and drain by placing in a dish towel and squeezing out all of the water.
  • Combine the garlic, sour cream and cream cheese. Whip with a spoon until combined and the cream cheese is smooth.
  • Add spinach to the cream and separate into 4 equal parts.
  • Place 1/4 of the creamed spinach in the middle of one of the flatten chicken breast and roll up.
  • Wrap breast in bacon and secure with a toothpick.
  • Repeat process for the other 4 chicken breasts.
  • Bake for 35 minutes or until chicken is cooked through.
  • Switch oven to broil and broil for 5 minutes to crisp up the bacon.

4 boneless skinless chicken breasts
1 (8 ounce) package fresh mushrooms, sliced
2 (12 ounce) packages frozen spinach
1 medium onion, diced
4 garlic cloves, minced
3 tablespoons butter
1/2 cup dry white wine
3 cups cooked white rice
2 (1 1/4 ounce) packages hollandaise sauce
1/2 cup butter (for hollandaise sauce)
2 cups water (for hollandaise sauce)

Steps:

  • Preheat oven to 350 degrees.
  • Butterfly cut the chicken breast. Cover in saran wrap and pound with flat side of meat tenderizer until ¼ in thick.
  • In a medium fry pan melt the butter and add the wine. Sauté the onion, garlic and mushrooms until tender.
  • Defrost the spinach and squeeze as much of the liquid out of it as possible. Add to the onion, garlic and mushroom mixture. Mix well to break apart the spinach and mix well.
  • Add the onion, garlic. mushroom and spinach mixture to the cooked white rice and mix well.
  • Use the rice mixture to stuff the chicken breast. You will have rice remaining.
  • Place remaining rice in a 9" x 13" baking pan (I recommend that you put tin foil around the edges of the pan - otherwise the rice will burn) and place the stuffed chicken breast on the rice.
  • Bake chicken for 35 minutes. While chicken is baking prepare hollandaise sauce according to the directions. After 35 minutes using half of the hollandaise sauce, cover the chicken and bake another 10 minutes or until the internal temperature of the chicken is 165 - 170 degrees using a good meat thermometer.
  • Use the remaining hollandaise sauce for the chicken or for the rice once plated.

8 slices bacon
4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 cup crumbled blue cheese
2 tablespoons all-purpose flour
1/8 teaspoon ground black pepper
1/4 teaspoon salt
2 tablespoons olive oil

Steps:

  • 1.Cook bacon until crisp. I prefer to use an indoor grill. Bacon can also be cooked in a skillet over medium-high heat, or the microwave at about 1 minute per slice. Drain on paper towels, and set aside. 2.Preheat the oven to 350 degrees F (175 degrees C). In a medium bowl, stir together the spinach and blue cheese. Crumble in the bacon, and stir to distribute. 3.Lay the chicken breast halves out on a clean surface, and distribute the spinach mixture evenly onto the centers of them. Fold the chicken over the filling, and secure with toothpicks. Stir together the flour, salt and pepper on a dinner plate. Roll the chicken in the flour to coat. 4.Heat the oil in a skillet over medium-high heat. Quickly brown each piece of chicken on top and bottom. Remove to a lightly greased baking dish, and cover with a lid or aluminum foil. 5.Bake for 30 minutes in the preheated oven, until chicken juices run clear, and filling is hot.

1 lb boneless, skinless chicken breasts
4 oz pepper jack cheese, shredded (you can use up to 6 oz)
1 c frozen spinach, thawed and drained
2 tbsp olive oil
1 tbsp breadcrumbs
sea salt, to taste
freshly ground black pepper, to taste

Steps:

  • 1. Preheat oven to 180 (350 degreesf ). Flatten the chicken to 1/4-inch thickness. In a medium bowl, combine the pepper jack cheese, spinach, salt and pepper. Combine the Cajun seasoning and breadcrumbs together in a small bowl. Spoon about 1/4 c of the spinach mixture onto each chicken breast. Roll each chicken breast tightly and fasten the seams with several toothpicks. This part requires a tiny bit of skill and I typically use about 8 toothpicks in each roll to ensure none of the filling seeps out. Be sure to count how many total toothpicks were used! Brush each chicken breast with the olive oil. Sprinkle the Cajun seasoning mixture evenly over all. Sprinkle any remaining spinach and cheese on top of chicken (optional). Place the chicken seam-side up onto a tin foil-lined baking sheet (for easy cleanup). Bake for 35 to 40 minutes, or until chicken is cooked through. Remove the toothpicks before serving. Count to make sure you have removed every last toothpick. Serve whole or slice into medallians

4 6 - 7 ounces boneless, skinless chicken breasts
Salt and pepper
3 tablespoons EVOO
1 large clove garlic, grated or minced
4 cups baby spinach
A pinch freshly grated or ground nutmeg
1/2 cup drained fresh ricotta
1/2 cup (loosely packed) freshly, finely grated Parmigiano-Reggiano or Grana Padano
8 slices prosciutto di Parma (preferably "reserve" quality), thinly sliced
1 lemon, halved

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees . Butterfly the chicken by slicing horizontally into the thick, long side of each breast, taking care not to slice all the way through. Open each breast like a book and place on a work surface. Using a mallet, pound the chicken to even it out a bit. Season both sides with salt and pepper. In a medium skillet, heat 1 tbsp. EVOO, one turn of the pan, over medium. Add the garlic and stir 30 seconds. Add the spinach and stir until wilted, 3 to 4 minutes. Add the nutmeg; season. Drain the spinach well, let cool, then finely chop. (You will have 3 to 4 tablespoons chopped spinach.) In a medium bowl, mix the spinach with the cheeses; season. Spread some of the spinach mixture on one side of each chicken breast, leaving a small border. Close the other half of the chicken breast over the filling to cover. Wrap each chicken breast with 2 slices prosciutto. In a large, ovenproof skillet, heat the remaining 2 tbsp. EVOO, two turns of the pan, over medium-high. Add the chicken and cook until the prosciutto is browned, 2 to 3 minutes on each side. Transfer the skillet to the oven and roast until the chicken is cooked through, about 12 minutes. Halfway through cooking, add the lemon halves, cut side down, to the pan and cook until the lemons are browned. Divide the chicken breasts among plates. Squeeze the juice from the lemon halves over the chicken.

4 slices Fat Free Mozzarella cheese (1oz each)
1 C baby spinach leaves, chopped
4 TBSP all purpose flour, divided
1 TBSP extra virgin olive oil
1 TBSP I Can't Believe It's Not Butter Spread
1 C Swanson 99% FF chicken broth
1 TBSP Half-n-Half
Salt & Pepper to taste

Steps:

  • Preheat oven to 350 F. Cut each breast horizontally almost to the opposite edge. Fold back top half of breast. Sprinkle lightly with salt & pepper. Place 1 slice of ham, 1 slice of mozzarella, & 1/4 cup spinach on each check breast. Fold top half of breasts over filling. Spread 3 tablespoons flour on a plate. Holding chicken breasts closed, coat in flour & shake off the excess. Lightly sprinkle chicken with salt & pepper. Heat oil & margarine spread in large skillet over medium heat. Place chicken in skillet & cook about 4 minutes on each side or until browned. Transfer chicken to shallow baking dish. Bake in oven 10 minutes or unitl chicken is no longer pink and juices run clear. Whisk chickn broth and cream into remaining 1 TBSP flour in a small bowl. Pour broth mixture into the skillet you browned the chicken in. Heat over medium heat, stirring constantly, until sauce thickens... about 3 minutes. Transfer chicken breast to 4 plates and spoon the sauce over the top.
