4 eggs
2 cup milk
1 1/3 cup flour, all-purpose
1/2 teaspoon salt
3 tablespoon butter, plus more for the skillet and casserole dish as needed
1 onion, finely chopped
1 teaspoon olive oil
2 pounds fresh spinach or your favorite dark leafy green, washed and roughly chopped
1 tablespoon fresh dill, chopped or 1 teaspoon dry dill
½ teaspoon salt
1 pound ricotta cheese
2 tablespoons butter
2 tablespoons flour
½ teaspoon salt
2 cups milk, warmed until just hot
2 ounces smoked salmon, crumbled into pieces
½ tablespoon fresh dill, chopped or ¼ teaspoon dry dill
pinch of freshly ground black pepper

Steps:

  • Whisk together the eggs, milk, and salt. Slowly sprinkle in the flour while whisking into a smooth batter. Warm an 8- to 10-inch skillet over medium-low heat. Add the butter and once it has melted, whisk half of it into the batter quickly.
  • Pour about ¼ cup of batter into the hot skillet and immediately rotate the pan in a circular motion to spread the batter as it cooks on. You may need to adjust the amount of batter you pour into your pan, until you have consistently thin crepes. As soon as the edges start to come up or it appears dry in the center, loosen by shaking the pan, then lift and flip over the crepe. Cook for another 30 seconds and then it should be done. Repeat making the crepes until you run out of batter. Add more butter as needed to keep the crepes from sticking.
  • In a large saute pan over medium high heat, add the chopped onions and a splash of water. Sauté lightly until they become nearly translucent, about 5-10 minutes. Next, drizzle in the olive oil, fold in the chopped spinach or greens, and sprinkle with the salt. Cook, tossing the onions & greens periodically until the greens are wilted and bright green. Transfer to a small-holed colander or wire mesh strainer to drip out any excess liquid.
  • In a pot, melt the butter over medium heat. Sprinkle in the flour, while stirring to combine. Cook this roux for 5 minutes or more until it becomes a very light golden color. Pour in half of the warm milk. Stir the sauce until it comes up to a simmer. Pour in the remaining warm milk and continue to stir until it has thickened, another 5-10 minutes of simmering and stirring. Fold in the crumbled smoked salmon and dill. Taste. Add more salt and a few grinds of black pepper, if needed.
  • Return to the filling, squeezing out any residual liquid from the greens. Fold it together with the ricotta and dill.
  • Place 2-3 dollops of the filling in the center of a crepe. Roll up the crepe and place in a casserole dish that has been lightly greased with butter. Repeat with the remaining crepes until you run out of crepes or filling.
  • If making ahead, cover with foil or a lid and store in the fridge until you are ready to eat it.
  • If enjoying immediately, preheat the oven to 350 degrees F. Cover with a lid or foil and bake for about 15-25 minutes, until the center is hot to the touch. Remove the lid, drizzle on the salmon sauce and continue to cook for another 5-10 minutes, until the dish is steamy.
  • If starting from being stored in the fridge, place the cold covered dish in the oven as it preheats. Once the oven is fully hot, bake it for about 40-50 minutes, until the center is hot. Remove the foil or lid, drizzle with the cold sauce and bake for another 10-15 minutes.

1/2 pound cream cheese, at room temperature
2 tablespoons chopped capers
2 tablespoons chopped cornichons
2 tablespoons chopped fresh dill
1 tablespoon lemon juice
2 teaspoons lemon zest
Kosher salt and freshly ground black pepper
1/4 cup heavy cream
1/2 cup cold heavy cream
2 tablespoons chopped fresh dill
1 tablespoon chopped capers
1 tablespoon chopped cornichons
2 teaspoons lemon zest

1/2 pound very thinly sliced gravlax, Scottish smoked salmon or nova, separated and gently torn into 1- or 2-inch pieces

Steps:

  • For the crepes: Whisk the eggs and flour in a medium bowl until smooth. Slowly whisk in the milk, 2 tablespoons warm water, 1/4 teaspoon salt and a few grinds of pepper until smooth. Refrigerate the batter, covered, at least 1 hour or overnight.
  • Heat a 10-inch nonstick skillet over medium heat, and brush with melted butter. Whisk the 2 tablespoons of melted butter into the crepe batter (batter will appear a bit grainy, but that's OK). Ladle a scant 1/4 cup batter into the skillet, and swirl the batter around to cover the bottom. Cook the crepe over medium heat until the top appears dry and the edge is starting to curl back, about 30 seconds. Flip the crepe with your fingers or a spatula, and cook until brown in spots, about 15 seconds. Transfer the crepe to a wire rack to cool. Repeat with the remaining batter, for a total of 12 crepes (you can stack them on the rack once they've cooled). (The crepes can be refrigerated, wrapped, overnight.)
  • For the cream cheese spread: Combine the cream cheese, capers, cornichons, dill, lemon juice and zest, 1/4 teaspoon salt and a few grinds of pepper in a medium bowl with a spatula. Drizzle in the heavy cream, and mix until smooth; set aside at room temperature.
  • To assemble: Line an 8-inch round cake pan with plastic wrap so it overhangs by 4 inches on both sides. Place 1 crepe (this will be the top of the cake, so pick a pretty one) on a work surface, and spread evenly with 2 tablespoons of the cream cheese spread. Transfer the crepe, cheese-side up, to the cake pan. Arrange pieces of gravlax evenly over the cheese spread, sprinkle with about 1 teaspoon of the lemon juice, then scatter with 1 tablespoon of the onion, followed by a generous tablespoon of the egg. Repeat 6 times. Spread the 8th crepe with 2 tablespoons of the cheese spread, then place it on top of the other layers, cheese-side down, to create the bottom of the cake. Stretch the plastic wrap over the cake to draw the lacy edges of the crepes up a bit and to cover the cake completely. Use a small cast-iron skillet or a large glass measuring cup to weigh down the cake and press it into an even shape. Refrigerate at least 1 hour up to overnight.
  • To garnish: Remove the weight from the cake, and peel back the plastic. Use the long sides of the plastic to ease the cake out of the pan. Flip the cake pan over, and set the crepe cake on top. Place a serving plate over the cake, and invert the cake onto it. Remove the plastic. Whip the cream in a medium bowl with a hand mixer on medium speed until stiff peaks form. Use an offset spatula to spread the whipped cream decoratively over the top of the crepe cake. Toss the dill, capers, cornichons and lemon zest in a small bowl until lightly combined, scatter the mixture over the whipped cream and sprinkle with salt and a few grinds of pepper.

I designed this for 2 but you can easily double or even triple this yummy recipe for your family or guests.

1 lb salmon fillet
paprika
4 ounces cream cheese, softened
2 teaspoons garlic, minced really fine
1/2 teaspoon parsley
pepper (to your taste)
1/4 cup onion, chopped very fine
fresh Baby Spinach
olive oil
garlic powder
salt

Steps:

  • Preheat oven to 400. Spray a 9x9 baking pan with olive oil. Place salmon fillets in pan. Sprinkle lightly with paprika.
  • In a small bowl, mix together the cream cheese, minced garlic, parsley and a sprinkle of pepper. Spread this over the salmon fillets. (I usually micrwave this for 20 to 30 seconds to make it easier to spread).
  • Sprinkle the chopped onion evenly over the cream cheese.
  • Layer the baby spinach leaves evenly and neatly over the onions (I make 4 layers of leaves).
  • Spray or drizzle the spinach leaves with olive oil. Sprinkle lightly with garlic powder, salt and pepper.
  • Cover tightly with foil and bake 25-35 minutes depending on the thickness of your salmon. It takes a little longer than usual because of all the toppings.

3 large eggs
1 1/2 cups milk
1 cup flour
1 bunch scallions, trimmed and minced
1/3 cup chopped fresh dill
Pinch of cayenne pepper
Salt and freshly ground black pepper
1/2 cup water
1 to 2 tablespoons vegetable oil
1 pound cream cheese, at room temperature
1 tablespoon grated lemon rind
1 tablespoon fresh lemon juice
2 shallots, finely minced
2 tablespoons drained capers
2 teaspoons Hungarian paprika
12 ounces smoked salmon, in thin slices

Steps:

  • Squeeze the spinach to drain out all excess moisture. Set aside. Place the eggs and milk in a bowl or food processor and beat until well blended. Blend in the flour until smooth. Add the spinach, scallions, half the dill, the cayenne pepper, salt and pepper and blend until very smooth. Stir in the water and allow the batter to rest for 15 minutes.
  • Heat a seven- to eight-inch crepe pan over medium-high heat. Brush with oil. Pour about one-third cup of the batter into the pan, tilting the pan to coat the bottom evenly. Fry about two minutes, until lightly browned, turn the crepe over and cook about 30 seconds longer. Remove the crepe from the pan and repeat with the remaining batter, making 10 to 12 crepes.
  • Beat the cream cheese until light and fluffy. Add the lemon peel, juice, shallots, remaining dill, capers and paprika. Spread each crepe with some of this mixture, then cover with a layer of smoked salmon. Roll each crepe jellyroll fashion and wrap in plastic wrap. Refrigerate at least two hours.
