Time 1h15m

Yield 8-10 serving(s)

Number Of Ingredients 10

1 (9 inch) double crust pie crusts, unbaked (2 rounds)
4 large eggs
1 (15 ounce) container ricotta cheese (about 2 cups)
1 cup asiago cheese, finely grated
1/4 cup parmesan cheese, finely grated
3/4 teaspoon black pepper, coarsely ground
1 teaspoon dried basil, crushed
1 (10 ounce) package frozen chopped spinach, thawed and drained very well
1/4 cup seasoned dry bread crumb
1/4 cup sun-dried tomato packed in oil, drained, coarsley chopped

Steps:

  • Line a 9-inch pie plate with one crust round.
  • Beat one of the eggs with a fork and use a pastry brush to lightly brush egg over the pie crust (you might not need all of the egg- save the rest for brushing the top crust later).
  • Beat remaining eggs in a large bowl, using a whisk.
  • Add cheese, pepper, and basil and stir to combine.
  • Add spinach (make sure it has been drained very well- squeezed over a colander to get out all the freezer moisture), as well as the bread crumbs and tomatoes.
  • Pour filling into crust and top with the second crust round.
  • Fold edges under to seal and crimp or flute edges as desired.
  • Brush with remaining egg wash.
  • Cut a few slits in the top crust and bake in a preheated 375 F oven for 25 minutes.
  • Cover edges with a ring of foil or a pie sheild, then continue baking another 20 minutes.
  • Cool on wire rack at least 15 minutes before attempting to slice.

CRISPY GREEK-STYLE PIE

Crispy Greek-style pie image

A crispy pie that you can adapt for your needs, add chicken or keep it veggie. A good fail-safe for your repertoire

Provided by Good Food team

Categories     Dinner, Lunch, Main course, Snack, Supper

Time 40m

Number Of Ingredients 5

200g bag spinach leaves
175g jar sundried tomato in oil
100g feta cheese, crumbled
2 eggs
125g filo pastry

Steps:

  • Put the spinach into a large pan. Pour over a couple tbsp water, then cook until just wilted. Tip into a sieve, leave to cool a little, then squeeze out any excess water and roughly chop. Roughly chop the tomatoes and put into a bowl along with the spinach, feta and eggs. Mix well.
  • Carefully unroll the filo pastry. Cover with some damp sheets of kitchen paper to stop it drying out. Take a sheet of pastry and brush liberally with some of the sundried tomato oil. Drape oil-side down in a 22cm loosebottomed cake tin so that some of the pastry hangs over the side. Brush oil on another piece of pastry and place in the tin, just a little further round. Keep placing the pastry pieces in the tin until you have roughly three layers, then spoon over the filling. Pull the sides into the middle, scrunch up and make sure the filling is covered. Brush with a little more oil.
  • Heat oven to 180C/fan 160C/gas 4. Cook the pie for 30 mins until the pastry is crisp and golden brown. Remove from the cake tin, slice into wedges and serve with salad.

Put the spinach and phyllo sheets in the refrigerator the night before or early in the morning for thawing. -Kristyne McDougle, Lorain, Ohio

Tips:

  • Use fresh spinach: Fresh spinach has a more vibrant flavor and color than frozen spinach. If using frozen spinach, be sure to thaw and squeeze out all excess water before using.
  • Don't overcook the spinach: Overcooked spinach will become mushy and lose its flavor. Cook it just until it is wilted.
  • Use a good quality feta cheese: Feta cheese is a key ingredient in this pie, so it's important to use a good quality cheese. Look for a feta cheese that is creamy and slightly crumbly.
  • Don't skimp on the sun-dried tomatoes: Sun-dried tomatoes add a delicious sweet and tangy flavor to this pie. Be sure to use a good quality sun-dried tomato that is not too dry.
  • Use a deep-dish pie plate: A deep-dish pie plate will help to prevent the pie from bubbling over.

Conclusion:

Spinach pie with sun-dried tomatoes is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover spinach and feta cheese, and it is also a good source of protein and fiber. This pie is sure to be a hit with your family and friends.
