⅓ cup uncooked long grain white rice
⅔ cup water
1 (10.75 ounce) can condensed cream of chicken soup, undiluted
¼ cup milk
2 fresh jalapeno peppers, seeded and chopped
½ teaspoon salt
¼ teaspoon ground black pepper
2 tablespoons butter
½ cup chopped onion
1 (10 ounce) package frozen chopped spinach, thawed and drained
4 ounces processed cheese food, cubed

Steps:

  • In a pot, bring the rice and water to a boil. Cover, reduce heat to low, and simmer 20 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • In a bowl, mix the soup, milk, jalapeno peppers, salt, and pepper.

3 teaspoons cooking oil
1 cup finely chopped onions
2 sprigs fresh thyme
1 whole hot chile pepper
Salt to taste
4 cups chopped spinach (preferably fresh)
2 cups long grain white rice (washed and drained)
2 2/3 cups water

Steps:

  • Gather the ingredients.
  • Add the oil to a deep pot and heat over medium heat.
  • Add the onions and sauté until translucent, about 5 minutes.
  • Add the thyme, hot chile pepper, and salt to taste and continue to sauté for about 1 minute.
  • Add the spinach and toss to wilt it and reduce the volume slightly.

3 cups cooked brown rice
4 eggs, beaten
1 package frozen chopped spinach
1 cup milk
1 lb grated longhorn cheese or 1 lb sharp cheddar cheese (I only use 1/2 lb.)
1/3 cup oil or 1/3 cup margarine
1 1/2 teaspoons soy sauce
1/4 teaspoon thyme
1/4 teaspoon marjoram
1/4 teaspoon rosemary
1 1/2 teaspoons salt
2 tablespoons minced onions
1 cup breadcrumbs

Steps:

  • Cook and drain spinach.
  • Combine all ingredients except breadcrumbs.
  • Oil a large casserole and sprinkle 3/4 cup breadcrumbs in bottom.
  • Pour mixture into casserole and sprinkle top with remaining breadcrumbs.
  • Bake at 350* for about 1 hour.
  • Check with knife.

2 tablespoons unsalted butter, at room temperature, plus extra for greasing the pan
3 large eggs, at room temperature, beaten
1 cup whole milk
Four 3/4-inch-thick slices rustic bread, crusts removed, torn into 1-inch pieces
1 small onion, chopped
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 pounds spinach leaves
1 cup grated Parmesan
1/2 teaspoon ground nutmeg
4 hard boiled eggs, peeled

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 375 degrees F. Butter a 9-by-5-inch nonstick loaf pan. Line the bottom of the pan with parchment paper. Set aside.
  • Place the eggs and milk in a large bowl. Add the bread and stir to combine.
  • Heat the butter in a large, high-sided skillet over medium-high heat. Add the onion, 1 teaspoon of the salt and 1/2 teaspoon of the pepper and cook until soft, about 6 minutes. In batches, add the spinach and cook until wilted, about 15 minutes. Drain in a colander. Press gently on top of the spinach to release excess moisture. Set aside to cool slightly. Transfer the spinach mixture to a food processor and blend until smooth. Pour the spinach into the bowl with the bread mixture.   • Spread half of the mixture on the bottom of the prepared pan. Lay the hard boiled eggs, end-to-end, in a line along the center of the spinach mixture. Add the remaining spinach mixture on top and press gently. Sprinkle the remaining Parmesan on top and bake for 1 hour. Cool 15 minutes, then run a thin metal spatula around the edges of the pan to release the loaf. Invert the loaf onto a cutting board, remove the parchment paper, and cut into slices.

2 (10 ounce) packages frozen spinach, thawed
2 beaten eggs
3/4 cup shredded cheddar cheese
1/3 cup fine dry breadcrumb
1 tablespoon vinegar
1/2 teaspoon salt
1 dash ground black pepper
4 slices bacon, chopped
2 tablespoons chopped onions
2 tablespoons chopped green peppers or 2 tablespoons red peppers
2 teaspoons all-purpose flour
1/2 cup water
2 medium tomatoes, peeled,seeded,chopped

Steps:

  • Squeeze excess liquid from the spinach; set aside.
  • In a mixing bowl, combine the eggs, cheese, bread crumbs, vinegar, salt and pepper.
  • Stir in the well-drained spinach; pat mixture into a greased 8x4x2" loaf pan.
