½ cup red wine vinegar
½ cup white sugar
1 ½ tablespoons water
1 ½ tablespoons butter
½ teaspoon salt
1 egg, beaten
1 (10 ounce) package baby spinach
1 (6 ounce) package sliced fresh mushrooms
1 (15 ounce) can mandarin oranges, drained
⅓ cup toasted slivered almonds
4 slices cooked bacon, crumbled
¼ red onion, sliced and separated into rings
¼ cup croutons, or as desired

Steps:

  • Mix vinegar, sugar, water, butter, and salt together in a saucepan; bring to a boil. Cook and stir until sugar dissolves and mixture is bubbling, about 1 minute. Remove from heat and cool to room temperature, about 1 hour.
  • Whisk egg into dressing; return saucepan to low heat and simmer until dressing thickens, 5 to 10 minutes.
  • Combine spinach, mushrooms, mandarin oranges, almonds, bacon, red onion rings, and croutons in a large bowl; pour dressing over salad. Toss to coat.

2 tablespoons canola oil

1 tablespoon Dusseldorf-style German mustard
⅛ teaspoon ground cloves
⅛ teaspoon Chinese five-spice powder

½ cup pecan halves
½ teaspoon white sugar
1 teaspoon dried rosemary
¼ teaspoon cayenne pepper
3 cups fresh spinach leaves
2 green onions, chopped

  • Combine reserved liquid from mandarin oranges, canola oil, olive oil, mustard, cloves, and Chinese five-spice powder in a jar with a tight-fitting lid; seal jar and shake vigorously until the dressing emulsifies.

3 cups fresh spinach, washed and dried, cut into chiffonade
2 green onions, chopped
1 orange, supremed and halved
1 tablespoon butter
1/2 teaspoon sugar
1/2 cup pecan halves
1 teaspoon dried rosemary
1/4 teaspoon cayenne
Salt and freshly ground black pepper
Citrus Dressing, recipe follows
1 teaspoon Dijon mustard
2 tablespoons orange or grapefruit juice (or a combination)
3 tablespoons canola oil
1 tablespoon olive oil
Salt and freshly ground black pepper

Steps:

  • Put the spinach and green onions in large salad bowl and sprinkle with the halved citrus supremes. In a small saute pan over medium heat, add the butter and sugar and stir until the butter is melted. Add the pecans and toss until the pecans begin to brown. Stir in the rosemary and cayenne and stir just a few seconds to release the aroma. Remove from the heat and season with salt and pepper, to taste. Sprinkle the pecans on the salad while still warm. 1 cup Candied Pecans

Steps:

  • If making a large salad, I suggest doing layers. For individual salads, no need for layers.
  • Place 1/2 spinach in large salad bowl.
  • Top with 1/2 of the strawberries, 1/2 of the oranges and half of the pecans.
  • Add second layer of spinach and top with remaining strawberries, oranges and pecans.
  • Serve with poppy seed dressing or balsamic dressing.

1 cup pecans
2 tablespoons sugar
1 tablespoon margarine
1 tablespoon orange juice
1/4 teaspoon cinnamon
1/8 teaspoon ground red pepper
1/3 cup oil
1/4 cup sugar
1/2 teaspoon salt
1/4 cup white wine vinegar
1 tablespoon parsley flakes
1/2 teaspoon hot pepper sauce
1 cup sugared pecans
8 cups lettuce
1/2 cup sliced green onion
1 cup sliced celery
canned mandarin oranges

Steps:

  • For sugared pecans: combine sugar, margarine, orange juice, cinnamon and red pepper and cook to boiling. Boil for 1 minute. Add pecans and coat well. Bake on cookie sheet at 200 degrees for one hour stirring every 15 minutes. Cool completely and store in air-tight container.
  • For dressing: combine all ingredients and refrigerate for 1 hour.
  • For salad: combine ingredients, adding pecans and oranges last. Add dressing and gently toss.
  • Preparation time does not include cooking pecans.
