STRAWBERRY AND SPINACH SALAD WITH HONEY BALSAMIC VINAIGRETTE

Strawberry and Spinach Salad with Honey Balsamic Vinaigrette image

This is a great easy summer salad, with a lot of options as to mixing and matching. Plus the salad looks pretty fancy. You can throw in any summer fruit or berry with this mix, blueberries and raspberries are a good choice, as are blackberries later in the season. The nuts are optional but a pecan or roasted almond adds a little crunch and more protein!

SPINACH SALAD WITH STRAWBERRIES

Spinach Salad With Strawberries image

Delicious colorful light salad. I have also served with chicken tenders. Strawberries are my favorite especially when in season, but you can use any fruit desired. It takes a little while to make the spiced pecans, but is well worth it or you can also toast the pecans instead of using spiced version.

Tips:

  • For the best flavor, use fresh, ripe strawberries. If you can't find ripe strawberries, you can use frozen strawberries, but be sure to thaw them before using.
  • To make the dressing, you can use either olive oil or avocado oil. Olive oil has a more pungent flavor, while avocado oil is more mild. If you are using avocado oil, you may want to add a little bit of lemon juice or vinegar to brighten up the flavor.
  • If you don't have any goat cheese, you can substitute feta cheese or blue cheese. Feta cheese has a salty, tangy flavor, while blue cheese has a more pungent flavor. Either cheese will add a nice creamy texture to the salad.
  • You can add other ingredients to the salad, such as crumbled bacon, chopped nuts, or dried cranberries. Just be sure to add them just before serving, so that they don't get soggy.
  • Serve the salad immediately, while the strawberries are still fresh and juicy.

Conclusion:

This spinach salad with strawberries is a delicious and refreshing salad that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a healthy and delicious salad, give this spinach salad with strawberries a try.
