1 butternut squash, halved lengthwise and seeded
1 large carrot, cut into large chunks
1 sweet potato, cut into large chunks
1 head garlic
1 ½ tablespoons olive oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Arrange butternut squash halves, carrot chunks, sweet potato chunks, and whole garlic head onto the prepared baking sheet. Drizzle 1 1/2 tablespoons olive oil over the vegetables; season with rosemary, salt, and black pepper.
  • Roast in preheated oven for 20 minutes, turn the carrot and sweet potato chunks, and continue roasting until everything is tender, 20 to 30 minutes more. Set aside to cool.

  • Heat oven to 350°. Cut squash in half; remove seeds and fibers. Place squash, cut sides up, in rectangular pan, 13 x 9 x 2 inches. Pour water into pan until 1/4 inch deep. Bake uncovered about 40 minutes or until tender. Cool; remove pulp from rind and set aside.
  • Melt butter in heavy 3-quart saucepan over medium heat. Cook onion in butter 2 to 3 minutes, stirring occasionally, until crisp-tender. Stir in apples, thyme and basil. Cook 2 minutes, stirring constantly. Stir in broth. Heat to boiling; reduce heat to low. Simmer uncovered 30 minutes.

2 small butternut squash (2 1/2 lb in total)
3 tablespoons unsalted butter
3 small granny smith apples, cored,peeled and chopped
1 1/2 cups finely chopped yellow onions
3 tablespoons minced peeled fresh ginger
2 cloves garlic, peeled and chopped
6 cups vegetable stock
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 cup whipping cream (optional)

Steps:

  • Position a rack in the middle of the oven and preheat to 450*F.
  • Line a jelly roll pan with tinfoil.
  • Halve the squash lenghtwise and with a sharp metal spoon scrape out and discard all the seeds and fibres.
  • Lay the squash halves, cut side down, on the pan and bake them until they are very tender when pierced with a fork-- about 40 minutes.
  • Remove the pan from the oven and when the squash is cool enough to handle, scoop out the flesh, including any well browned edges.
  • Chop and reserve the flesh.
  • In a large pot over medium heat, melt the butter.
  • Add the apple, onion,ginger and garlic and cook, uncovered, stirring once or twice until lightly browned.
  • (15 to 20 minutes) Add the stock, reserved squash, salt and pepper and bring to a simmer.
  • Partially cover the pan and cook the soup, stirring occasionally until the apples are very tender, about 30 to 35 minutes.
  • Remove from heat and cool slightly.
  • Puree the soup in batches in a food processor or blender, or force it through a food mill.
  • This soup can be prepared up to 3 days in advance, and will taste the better for it.
  • Cool, cover and refridgerate.
  • To serve, return soup to the pan.
  • Add the cream if you are using it, and heat, stirring often, until steaming, about 5 minutes.
  • Adjust the seasoning and ladle into bowls.
  • NOTE: A spoonful of sweetly caramelized apples and a dollop of ginger cream will transform this simple country soup into a dazzling starter.
  • Or, sprinkle it with crumbled Gorgonzola (about 1 cup), diced raw red apple (about 3/4 cup) and chopped pistachios or toasted pumpking seeds (about 1/2 cup) For Carmelized apples: melt 3 TBS unsalted butter.

  • In a skillet cook bacon until crisp and drain, reserving 1 1/2 tablespoons fat. Crumble bacon.

1 large butternut squash, halved lengthwise and seeded
2 tablespoons butter, or more to taste
3 large shallots, chopped
6 cups chicken stock, or more as desired, divided
3 Granny Smith apples, cored and chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour enough water into a baking dish to be about 3/4-inch deep. Lie squash halves into the water with the cut side facing up.
  • Roast in preheated oven until a fork easily pierces through the flesh, 45 to 50 minutes; Remove from oven and flip squash; let cool enough to handle.

Since it has no cream, this recipe looks like it would reheat easily. The original recipe is by Joyce Goldstein and the ingredients were doubled for a large gathering.

1 large onion (about 2 cups)
1 granny smith apple, peeled, cored and diced (about 1 cup)

6 cups chicken stock

Steps:

  • Melt the butter and olive oil in a soup pot over moderate heat.
  • Add the diced onions and apples and cook until tender, about 10 minutes.
  • Stir in the spices, cook for one minute.
  • Add the squash and chicken stock, bring to a boil, reduce the heat, and simmer, uncovered, until the squash is very tender, about 20-30 minutes.
  • In a blender or food processor, puree the vegetables in batches with a little bit of the stock.
  • Transfer puree mixture into a large bowl.
  • Stir in enough of the remaining stock to make a medium-thick soup.
  • Reserve any leftover stock if not serving right away, as the soup may thicken on standing. This is rich broth so if you have any left just add it to your favorite homemade soup or freeze for another use.
  • Season with salt and pepper and adjust the spices.
  • This soup may be made a day ahead, refrigerated uncovered until cold and then covered to store.
  • To serve, in a large pot heat the soup almost to scalding.
  • Ladle into bowls and top with thin slices of apple.

Salt and red chile powder to taste
4 to 5 cups vegetable broth
Cilantro-Walnut Pesto
1 cup walnut pieces
2 cups cilantro leaves, washed, drained and stemmed
1 green jalapeño pepper, seeded and chopped
1 teaspoon salt, or to taste
2 tablespoons cider vinegar

  • 1. Preheat oven to 400 degrees. In a large roasting pan, toss the squash, onions, garlic and apples with the oil to coat. Season well with the salt and chile. Roast, stirring every 10 minutes, until the vegetables are fork tender and lightly browned, about 40 minutes. 2. Put half of the vegetables and 2 cups of the broth in a food processor and purée until smooth. Repeat with the remaining vegetables and broth. Return puréed mixture to the pot. 1 2-pound butternut squash, peeled, seeded and cut into 2-inch pieces (approximately 4 cups)
2 Northern Spy or McIntosh apples, peeled, cored and cut into 2-inch pieces (approximately 2 cups)
1 large onion, peeled and coarsely chopped (approximately 1 cup)
3/4 teaspoon curry powder
3/4 teaspoon ground mace
1/2 teaspoon ground cardamom
1 cup cider
1 quart homemade chicken stock
1/2 cup half-and-half
1/2 teaspoon salt
1/4 teaspoon white pepper
1/4 cup finely minced scallions, green tops included, for garnish

Steps:

  • Heat the peanut oil in a large stockpot over medium-low heat. Add the squash, apples and onion, stir to coat with oil and saute uncovered, stirring occasionally, for 10 to 15 minutes, or until the onion is transparent.
  • Stir in the mace, curry and cardamom and continue cooking until the onion begins to brown.

Almost called this Squashalsauce it's such a great accompaniment to pork chops. This was easy and could also be done with a butternut squash or pumpkin. The curry is up to you. 3/4 of the family felt it improved it, but unfortunately didn't know my husband didn't like the stuff. I prepared my hubbard squash a week earlier (baked it whole with a lid cut out on the top for 2 hours) and froze it in baggies, but you can also use canned pumpkin.
