SQUID SAUTE WITH TOMATOES AND GARLIC

Number Of Ingredients 7

1 1/2 pounds squid, cleaned
15 garlic cloves, peeled
1/2 cup olive oil
1 teaspoon salt
1 teaspoon freshly-ground black pepper
2 large tomatoes, peeled, seeded and diced
1 large bunch oregano, leaves only, chopped

Steps:

  • Cut the squid bodies into 1/4-inch rings. Wash, dry and place in a mixing bowl. Puree the garlic with 1/4 cup of the olive oil in a blender until smooth. Pour over the squid. Add the salt and pepper, tossing well to combine.
  • Heat a dry, medium skillet over high heat. Then add a generous tablespoon of the remaining olive oil and heat until almost smoking. Pour in one-third of the marinated squid and saute about 30 seconds. Stir in one-third each of the tomatoes and oregano and cook about 2 minutes longer, just until the tomatoes dissolve and the garlic colors slightly. Transfer to a platter, wipe out the skillet and repeat two times. Serve hot. This dish works best when the squid is sauteed in batches. If the pan gets too crowded, it steams rather than sautes, which toughens the meat. This can be served over rice and beans as an entree, or with flour tortillas as an appetizer.

1 1/2 pounds cleaned squid
2 cups flat-leaf parsley sprigs, divided
5 garlic cloves

3/4 cup Chardonnay
1 (28-ounce) can whole tomatoes in juice, coarsely chopped

Yield Makes 4 servings

Number Of Ingredients 10

1/4 cup olive oil
3 cups sliced onions
1 pound cleaned squid, tentacles left whole, bodies cut crosswise into 1/2-inch rings
1 pound plum tomatoes, chopped
1 cup dry red wine
3 tablespoons chopped fresh basil
3 tablespoons chopped fresh parsley
2 tablespoons chopped fresh oregano
2 tablespoons tomato paste
1/4 teaspoon dried crushed red pepper

Steps:

  • Heat olive oil in heavy large skillet over medium-high heat. Add onions and sauté until golden, about 7 minutes. Add squid and sauté 1 minute. Add tomatoes, wine, basil, parsley, oregano, tomato paste, and crushed red pepper. Simmer until squid is tender and sauce thickens slightly, stirring occasionally, about 5 minutes. Season to taste with salt and pepper.

Tips:

  • Select the freshest calamari possible. Look for squid that is firm and white, with no signs of discoloration or sliminess.
  • Clean the calamari thoroughly. Remove the head, tentacles, and ink sac, and then rinse the body thoroughly under cold water.
  • Cut the calamari into bite-sized pieces. This will help it cook evenly.
  • Marinate the calamari in a mixture of olive oil, lemon juice, garlic, and herbs. This will help to tenderize the squid and add flavor.
  • Cook the calamari over high heat in a large skillet or wok. This will help to prevent the squid from becoming tough.
  • Stir the calamari frequently while cooking. This will help to ensure that it cooks evenly.
  • Cook the calamari until it is opaque and tender. This should take no more than a few minutes.
  • Serve the calamari immediately, garnished with fresh herbs and lemon wedges.
