¾ cup cranberries
¼ cup white sugar
3 teaspoons ground cinnamon
1 teaspoon ground nutmeg
⅓ cup quick-cooking oats
⅓ cup all-purpose flour
½ cup packed light brown sugar
¼ cup butter, cut into pieces
½ cup chopped pecans

¾ cup orange juice
2 cups white sugar
5 cups fresh cranberries
4 Gala apples - peeled, cored, and chopped
¾ cup chopped pecans
1 cup brown sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup rolled oats
⅓ cup butter, softened

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x12-inch baking dish.
  • Heat the orange juice, sugar, and about half the cranberries in a saucepan over medium heat until the mixture comes to a boil; simmer until the cranberries pop, 8 to 10 minutes, stirring occasionally. 4 Large or 8 small granny smith apples, cored and sliced
1 cup Cape Cod Select premium frozen cranberries
1/2 cup real butter
1/2 cup white sugar
2 tablespoon ground cinnamon
1/2 teaspoon ground nutmeg (optional)
pinch or two of salt to taste

Steps:

  • Melt butter in a large skillet over medium heat.
  • Stir in sugar, cinnamon, and nutmeg
  • Add apple slices and stir.
  • Add frozen cranberries.
  • Cook until apples are tender, 5 to 8 minutes. The cranberries will start to pop.

I am soooo having a blast with making up new recipes. I just made an awesome one this afternoon. I used Arrowroot in this. You can find it in the natural section most likely and it works like cornstarch as a thickener but healthier for you than cornstarch. I am going to try making a pie with this mixture and give it a pecan pie shell with crushed pecans that have been browned in butter and cinnamon. I think it will come out nice.

1 medium apple
1 -1 1/2 cup cranberries
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon arrowroot
4 teaspoons stevia powder
2 tablespoons butter (I used Goat Butter but you can use regular)

Steps:

  • I took one med. size green apple, peeled and cored it. Then I chopped it into even pieces about 1/3 of an inch thick. You don't want them too thick or they won't cook nicely.
  • Then rinse frozen cranberries in warm water, this thaws them a little. Place apples and cranberries in a big bowl. Set aside.
  • In a small bowl or dish mix cinnamon, nutmeg, arrowroot powder, and Stevia. Add mixture to apples and cranberries and toss to coat well. Scrape the bottom of the bowl as you mix; the arrowroot may cause the mix to stick to the bottom of the bowl.
  • In a non-stick skillet melt the butter over medium heat. Add apple/cranberry mixture to the pan. Gently stirring frequently. Cook over medium heat for about 2 minutes. Reduce heat to medium low or low and cover.
  • Cook additional 6-8 minutes, stirring occasionally, until apples are tender. Don't over cook and don't cook too hot or your cranberries will be really mushy (they should be soft with skins broken).
  • Serve warm or chilled. You can serve as is or with sweet coconut cream and or crushed pecans.

12 ounces fresh cranberries, washed
1/2 medium red onion, diced
1-ounce fresh ginger, peeled and cut into julienne

1 teaspoon white pepper
1/2 teaspoon ground cinnamon
3 tablespoons orange liqueur

  • Preheat the oven to 400 degrees F.
  • In a small saucepan, heat the orange and lemon juices with 1/2 cup of the port. Add the zest and cook until tender, about 10 minutes. Reserve.
  • In a medium saucepan, combine the cranberries, onion, 2 cups port, ginger, brown sugar, salt, pepper, and cinnamon. Over medium-high heat, cook until the relish thickens, 15 to 20 minutes, stirring occasionally. I had this for breakfast this morning. My internet was off and I couldn't look up baked apples so I made this one up. I enjoyed it so I thought I would post it. I used brown sugar substitute, but you can used regular brown sugar. I kept it low in both sweet and butter but you can add more if you want. I baked it in a toaster oven at 350°F for 30 minutes. If you use sweetened cranberries, I would cut back on the sugar. Substitute margarine for butter and this is a vegetarian recipe.
