STIR-FRIED DAIKON

Stir-Fried Daikon image

From Farmer John's Cookbook, The Real Dirt on Vegetables. This cookbook is a really great guide to eating seasonal vegetables. We have been getting a lot of strawberry daikon in our csa box and I needed a great way to use it up. This recipe is quite tasty. I add tofu to it and serve over brown rice. I leave out the oil and instead use a quick spray of oil on the wok. I add sake if the vegetables start to stick. Although I change the recipe to fit my diet, I'm posting as written.

GINGERED VEGETABLE STIR-FRY

Yield Serves 6

Number Of Ingredients 12

3 tablespoons chicken broth
2 tablespoons Chinese rice wine or medium-dry Sherry
1 teaspoon sugar
1 teaspoon cornstarch
1 teaspoon salt
1/4 pound fresh shiitake mushrooms, stems discarded
2 tablespoons vegetable oil
1/2 pound carrots (about 3 medium), cut into julienne strips
1/2 pound daikon (an Asian radish), cut into julienne strips (about 2 cups)
1/2 pound Napa cabbage, sliced thin (about 4 cups)
2 large garlic cloves, minced
2 teaspoons minced peeled fresh gingerroot

Steps:

  • In a bowl stir together broth, rice wine or Sherry, sugar, cornstarch, and salt until combined well. Cut mushroom caps into 1/8-inch-thick slices.
  • Heat a wok over high heat until hot. Add oil and heat until it just begins to smoke. Stir-fry carrots 3 minutes. Add daikon and stir-fry vegetables 2 minutes. Add mushrooms, cabbage, garlic, and gingerroot and stir-fry 2 minutes, or until carrots are crisp-tender. Stir broth mixture and add to vegetables. Stir-fry vegetables 1 minute.

Tips:

  • Choose the right daikon: Look for small to medium-sized daikon with smooth, unblemished skin. Avoid daikon that is too large, as it may be woody and bitter.
  • Peel and cut the daikon properly: Peel the daikon with a sharp knife or vegetable peeler. Cut the daikon into thin, even slices or matchsticks. This will help the daikon cook evenly and absorb the flavors of the other ingredients.
  • Use a hot wok or skillet: A hot wok or skillet will help to sear the daikon and prevent it from becoming soggy. Make sure to heat the wok or skillet over high heat before adding the daikon.
  • Don't overcrowd the wok or skillet: If you overcrowd the wok or skillet, the daikon will not cook evenly. Cook the daikon in batches if necessary.
  • Stir-fry the daikon until it is tender: Stir-fry the daikon for 3-5 minutes, or until it is tender. Do not overcook the daikon, as it will become mushy.
  • Add your favorite seasonings: Season the daikon with your favorite seasonings, such as salt, pepper, garlic, ginger, soy sauce, or oyster sauce. You can also add other vegetables, such as carrots, celery, or bell peppers.

Conclusion:

Stir-fried daikon is a quick and easy dish that is perfect for a weeknight meal. It is also a healthy and delicious way to get your daily dose of vegetables. With a few simple ingredients and a little bit of time, you can create a flavorful and satisfying dish that the whole family will enjoy.
