Tips:

  • Use fresh prawns for the best flavor and texture. If using frozen prawns, thaw them completely before cooking.
  • To devein the prawns, make a shallow incision along the back of each prawn and remove the dark vein. This will help to remove any grit or sand from the prawns.
  • Use a large wok or skillet for stir-frying. This will allow the prawns to cook evenly.
  • Heat the wok or skillet over high heat before adding the oil. This will help to prevent the prawns from sticking.
  • Add the prawns to the wok or skillet and stir-fry for 2-3 minutes, or until they are pink and opaque. Do not overcook the prawns, as they will become tough.
  • Add the chili bean sauce, sugar, and water to the wok or skillet and stir to combine. Bring the mixture to a boil, then reduce the heat to low and simmer for 5 minutes.
