STIR-FRIED GARLIC GREEN BEANS

Stir-Fried Garlic Green Beans image

The green beans should remain crunchy in this dish, which is adapted from Grace Young's recipe in "Stir-Fry to the Sky's Edge."

Provided by Martha Rose Shulman

Categories     vegetables, side dish

Time 10m

Yield 4 servings

Number Of Ingredients 8

1 pound green beans, trimmed
Salt to taste
1 tablespoon soy sauce, low-sodium if desired
1 tablespoon Chinese rice wine or dry sherry
1 tablespoon minced garlic
1 tablespoon minced fresh ginger
1/4 teaspoon red pepper flakes
1 tablespoon peanut oil or canola oil

Steps:

  • Bring a pot of water to a boil, season with salt and add the green beans. Boil 1 minute, drain and rinse with cold water, then place on a kitchen towel to dry thoroughly. (If vegetables aren't dry when you add them to the hot wok or pan, they will splutter and braise instead of stir-frying.) Place within reach of your wok or pan.
  • Combine the soy sauce and wine or sherry in a small bowl or measuring cup and place within reach of your wok or pan. Place the garlic, ginger and red pepper flakes in another small container near the burner.
  • Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and swirling the pan. Add the garlic and ginger, stir-frying for no more than 10 seconds, and then add the green beans. Toss together, then add the soy sauce and sherry and stir-fry for one to two minutes, until the beans are crisp-tender. Remove from the heat and serve.

GREEN BEANS WITH ALMONDS AND CARAMELIZED SHALLOTS

Green Beans with Almonds and Caramelized Shallots image

Savory and sweet. Everyone who tries this side dish absolutely loves it.

Provided by Jen

Categories     Side Dish     Vegetables     Green Beans

Time 45m

Yield 6

Number Of Ingredients 7

¼ cup blanched slivered almonds
3 tablespoons butter
5 small shallots, thinly sliced
1 red bell pepper, chopped
2 tablespoons white sugar
salt and pepper to taste
1 ½ pounds fresh green beans, trimmed and snapped

Steps:

  • Place the slivered almonds in a dry skillet over low heat, and cook and stir constantly until the almonds are lightly toasted, 3 to 5 minutes. Watch carefully, because they burn easily. Remove the almonds and set aside.
  • Heat butter in a skillet over medium-low heat, and cook and stir the shallots and red bell pepper until softened, about 8 minutes. Sprinkle the shallot mixture with sugar, salt, and pepper, and reduce heat to low. Cover, and cook slowly, stirring occasionally, until the sugar dissolves and the shallots caramelize, 5 to 8 minutes.
  • Place a steamer insert into a saucepan, fill with water to just below the bottom of the steamer, and bring the water to a boil. Add the green beans, cover, and steam until just tender enough to pierce with a fork, 7 to 8 minutes. Drain the green beans, place them into the skillet with the shallot mixture, mix well, and gently stir in the toasted almonds.

Tips:

  • Choose fresh, tender string beans: Look for beans that are bright green and snap easily when you bend them.
  • Trim the beans: Remove the tough ends of the beans before cooking.
  • Blanch the beans: Blanching helps to preserve the beans' color and crispness. To blanch, bring a large pot of salted water to a boil. Add the beans and cook for 2-3 minutes, or until they are bright green and tender. Drain the beans and immediately transfer them to a bowl of ice water to stop the cooking process.
  • Stir-fry the beans: Heat a large wok or skillet over high heat. Add the oil and swirl to coat. Add the beans, garlic, ginger, and red pepper flakes. Stir-fry for 2-3 minutes, or until the beans are heated through and slightly blistered.
  • Add the almonds: Add the almonds to the wok or skillet and stir-fry for 1-2 minutes, or until they are golden brown.
  • Season to taste: Add the soy sauce, rice vinegar, and sesame oil to the wok or skillet. Stir-fry for 1 minute more, or until the sauce is evenly distributed.
  • Serve immediately: Serve the stir-fried string beans and almonds over rice or noodles.

Conclusion:

Stir-fried string beans and almonds is a quick, easy, and delicious dish that is perfect for a weeknight meal. The beans are tender and crisp, the almonds are nutty and flavorful, and the sauce is savory and slightly sweet. This dish is also a good source of vitamins, minerals, and fiber. So next time you're looking for a healthy and satisfying meal, give stir-fried string beans and almonds a try.
