4 bone-in pork loin chops (1/2 inch thick and 4 ounces each)
8 small new potatoes, optional
1 small onion, chopped
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 can (4 ounces) sliced mushrooms, drained
1/4 cup water
1/2 teaspoon garlic salt
1/2 teaspoon Worcestershire sauce
1/4 teaspoon dried thyme
2 cups frozen peas and carrots

Steps:

  • In a large skillet, cook pork for 3-4 minutes on each side or until a thermometer reads 160°; drain. Add potatoes if desired and onion. , In a large bowl, combine the soup, mushrooms, water, garlic salt, Worcestershire sauce and thyme; pour into skillet. Bring to a boil. Reduce heat; cover and simmer for 1 hour. , Stir in peas and carrots; cover and simmer for 10 minutes or until heated through.

4 thick center-cut pork chops (trimmed)
4 medium peeled and quartered potatoes
4 peeled carrots, quartered
1 medium onion, cut in wedges
1 elephant garlic clove (optional)
1/4 lemons or 1/4 lime juice
2 tablespoons olive oil
2 tablespoons cajun spices
2 tablespoons chopped garlic
3 tablespoons mesquite smoker wood chips

Steps:

  • Combine marinade ingredients in a Ziploc bag.
  • Add pork chops and marinade in refrigerator for at least one hour.
  • To bottom of smoker add 3 tablespoons mesquite wood chips.
  • Line tray of smoker with aluminum foil (makes cleanup a breeze).
  • Arrange potatoes, onions, carrots and pork chops in tray.
  • Brush everything with marinade or spray with Pam.
  • Close lid and place on grill or stove-top.
  • Smoke over medium heat for 30 minutes.

1 ½ cups water
¼ cup dry white wine
¼ cup soy sauce
