2 (8 ounce) packages cream cheese
1 (12 ounce) container whipped topping (I like TruWhip)
1 1/2 cups confectioners' sugar (I always sift, then measure)
1 prepared round angel food cake
3 pints strawberries
1 jar prepared strawberry glaze, sometimes called 'strawberry sauce.' Usually found in the produce section of the grocery

Steps:

  • Slice and quarter strawberries, reserving a few for garnish.
  • Add sugar to taste.
  • Cover and refrigerate overnight.
  • Cream sugar and cream cheese.
  • Add whipped topping and beat until light and fluffy.
  • Drain about 3/4 of the liquid produced from soaking the berries; pour the glaze over and stir.

3 cups blackberries (about 10 ounces)
3/4 cup sugar
2 cups heavy cream, chilled
1/3 cup elderflower syrup or lychee syrup
1 prepared angel food cake

Steps:

  • Reserve a handful of the prettiest whole strawberries and blackberries for topping the trifle.
  • Hull and halve the remaining strawberries, and toss them with the sugar in a medium bowl, cover with plastic wrap and set aside until they get juicy, about 1 hour. (If you're in a hurry, set the bowl over a pot of simmering water for about 5 minutes to speed this up.)
  • Whip the cream in a chilled bowl until it holds soft peaks. Fold the elderflower syrup into the cream and keep chilled until ready to assemble the trifle.

1/4 cup fresh lemon juice
1/4 teaspoon almond extract
1 premade angel food cake, cut into 1-inch slices
1 pound cream cheese, at room temperature
2 cups heavy cream, at room temperature
2 pints blueberries
2 pints strawberries, hulled and sliced

Steps:

  • Heat 1/4 cup sugar, the lemon juice and 1/4 cup water in a saucepan over medium-high heat, stirring, until the sugar dissolves. Remove from the heat and stir in the almond extract.
  • Brush both sides of each slice of cake with the syrup. Cut the slices into 1-inch cubes.
