Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease 12 muffin cups.

½ cup strawberry yogurt fruit spread
½ cup margarine, softened
¾ cup white sugar
¾ cup brown sugar
1 egg
1 teaspoon vanilla extract
½ cup olive oil
2 cups all-purpose flour
½ teaspoon baking soda
½ teaspoon ground cinnamon
3 ¼ cups rolled oats

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the strawberry spread, margarine, white sugar and brown sugar until smooth. Beat in the egg and vanilla, then stir in the olive oil. This is just a little something I concocted this morning in lieu of how chilly it is outside (yes yes I know 50 degrees isn't very cold, but it is for florida). It combines my two favorite things--cinnamon and strawberries!

1/2 cup oats
3/4 cup water
1 teaspoon Equal sugar substitute
1/2 cup strawberry, chopped
1 tablespoon cinnamon

Steps:

  • Combine the oats and water in a bowl, stir and add about half the Equal and cinnamon.
  • Microwave for 1 minute.
  • Stir, then add in the strawberries and stir again.
  • Microwave for 1 more minute.
  • Stir again and add in the remainder of the Equal and the cinnamon.
  • Microwave again for 1 minute. (It should be done at this point, but depending on your microwave or how gooey you like your oatmeal you can heat it longer).
  • Enjoy!
