1 cup chopped seeded watermelon

1/4 cup freshly squeezed orange juice

2 cups strawberries
1-2 Tbsp. pure maple syrup, honey, or agave (as needed)
2 cups orange juice (pick great-quality!)
Popsicle Mold
Popsicle Sticks

Steps:

  • In a blender, puree strawberries until smooth. Taste the mixture and sweeten with 1-2 Tbsp. syrup, honey, or agave, if needed
  • Divide the strawberry mixture between your popsicle molds (mine holds 10 pops). Tap the popsicle mold on the counter a few times to remove any air bubbles and to help the puree settle.
  • Add about 1″ orange juice on top of the strawberry puree in each popsicle mold. Use a straw, drink stirrer or popsicle stick to gently swirl the orange juice into the top of the strawberry mixture. (This will help you create a gradient of color)
  • Pour the rest of the orange juice into the popsicle molds.
  • Insert sticks & cover with a lid if you can*
  • Freeze 3-4 hours or until completely solid.
  • To remove pops from the mold, run the outside of the mold under cold water for a few seconds, then jiggle the sticks side to side to loosen the pops. (Run the mold under water again if they're still not loosening.)

4 pints fresh strawberries
2 oranges
4 cups white sugar
1 (1.75 ounce) package fruit pectin (such as Sure-Jell® Pectin Light for less or no sugar)

Steps:

  • Inspect 8 half-pint jars for cracks and rings for rust; discard any defective ones. Immerse in simmering water until strawberry jam is ready. Wash new, unused lids and rings in warm soapy water.
  • Wash, hull, and crush strawberries in a bowl. Measure berries; you should have about 5 cups.
  • Scrub oranges well under hot running water and pat dry with paper towels. Zest oranges; place zest in a bowl and set aside. Peel oranges and remove all white pith. Divide oranges into segments and remove any white fibrous membranes and seeds. Chop oranges finely and mix into the bowl with the zest.
  • Place crushed strawberries and orange-zest mixture in a large pot over medium heat. Stir in pectin and slowly bring mixture to a full rolling boil. Add sugar and stir to dissolve. Return to a full rolling boil on high heat and boil for exactly 1 minute, stirring constantly. Skim off any foam with a ladle or a large spoon.
  • Pack strawberry jam into the prepared jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any spills. Top with lids and tightly screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart. Let rest for 24 hours without moving the jars. Gently press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

2 cups freshly squeezed orange juice (3-4 oranges)
1 cup strawberries, fresh or frozen
3/4 cup water
2 tbsp maple syrup

Steps:

  • Start by juicing the oranges using a citrus juicer, pour the juice into a jug and set aside.
  • Add the strawberries, water, and maple syrup into a high-speed blender and blend on high until smooth.
  • First, pour the orange juice evenly into each popsicle mold (about 1/2-3/4 full). Then, using a spoon, add the strawberry mixture into each mold.
  • You can carefully move the strawberry mixture around a little in the molds with a spoon so that the popsicles have more of a gradient look.
  • Place into the freezer and freezer for at least 1 hours before inserting the popsicle sticks into each mold to help them stay straight.
  • Freeze for at least 12 hours.
  • To take them out, run hot water over the molds briefly and they should be easy to pull out.
