2 cups strawberry, stemmed, quartered
16 oz cream cheese
½ cup powdered sugar
¼ cup milk
1 large egg
1 tablespoon water
11 oz puff pastry, 1 packages, thawed
2 tablespoons powdered sugar, for dusting
chocolate syrup, for serving

Steps:

  • In a food processor or blender, puree the strawberries until smooth.
  • Pour the strawberry puree through a sieve into a medium bowl to remove any seeds and clumps. Chill for 15 minutes, until the puree is cold.
  • In a separate large bowl, beat the cream cheese and ½ cup (80 g) of powdered sugar together with an electric hand mixer. Mix in the milk and strawberry puree. Set aside.
  • In a small bowl, whisk the beaten egg and water together. Set aside.
  • Preheat the oven to 400˚F (200˚C).
  • Roll a foot-long (30 cm) piece of aluminum foil into a tube. Repeat with 3 more pieces of foil to make 4 tubes total.
  • On a cutting board, roll the puff pastry out to 13 inches (33 cm) by 13 inches (33 cm). Slice the puff pastry lengthwise into 1½ inch-wide (4 cm) strips.
  • Wrap 2 of the strips around a foil tube, brushing the edges with egg wash and gently pressing together to adhere. Repeat with the remaining pastry strips and foil tubes.
  • Balance the ends of the foil tubes over the edges of a roasting pan or baking sheet so the pastry isn't touching the surface of the pan. Brush egg wash all over the pastry spirals.
  • Bake for 25 minutes, until golden brown.
  • Let the pastry tubes rest at room temperature for 5 minutes. Gently remove the foil tubes. Transfer the pastry tubes to a baking sheet lined with parchment paper and bake for 5 more minutes. Let cool to room temperature.
  • Fill a piping bag or zip-top bag fitted with a round tip with the cream cheese mixture. Pipe the cream cheese filling into the pastry tubes.
  • Dust with powdered sugar and drizzle with chocolate syrup.

1 sheet puff pastry
3 tablespoons chocolate hazelnut spread
6 strawberries, halved

Steps:

  • Preheat oven to 400˚F (200˚C).
  • Cut the puff pastry into 6 equal rectangles.
  • Taking one of the rectangles, cut diagonally to create 2 triangles.
  • Taking one of the triangles make 2 cuts on each of the long sides of the triangles leaving 1 centimeter from the edge. Make sure the cuts do not touch at top point of the triangle and leave about 1-inch from the bottom edge of the triangle.
  • Make 2 more cuts parallel and 1 centimeter from first 2 cuts. Make sure the cuts do not touch at top point of the triangle and leave about 1 inch from the bottom edge of the triangle.
  • Make one vertical cut in the center of the triangle that does not touch any of the other cuts. It should be 2 inches long and 1 inch from the bottom.
  • Place 1 teaspoon of chocolate hazelnut spread on the bottom of the triangle where the dough is not cut.
  • Place a piece of strawberry over the chocolate hazelnut spread.
  • Fold one of the bottom corners over the strawberry and fold the other bottom corner over that corner, press down to seal.
  • Repeat with the remaining pastry triangles.
  • Bake for 15-20 minutes until pastry is golden brown and puffed.

I found this recipe in an old cookbook and just love it. When our large family was home, I couldn't keep up with the demand for these yummy little pastries-the kids ate them as fast as I could bake them! It simply wouldn't be Christmas breakfast without a platter of these family favorites.

Number Of Ingredients 20

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
1 teaspoon plus 1/4 cup sugar, divided
1 cup warm 2% milk (110° to 115°)
6 tablespoons shortening
1 teaspoon salt
1 egg
3-1/4 to 4 cups all-purpose flour
FILLING:
1/4 cup sugar
1-1/2 teaspoons quick-cooking tapioca
1/2 cup frozen sliced sweetened strawberries with juice, thawed
1/2 teaspoon lemon juice
Melted butter
ICING:
2 tablespoons shortening
2 tablespoons butter, softened
1 cup confectioners' sugar
1/4 teaspoon vanilla extract
2 to 3 teaspoons milk

Steps:

  • In a large bowl, dissolve yeast in warm water. Add 1 teaspoon sugar; let stand for 5 minutes. Add the milk, shortening, salt, egg, remaining sugar and 2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky). Do not knead. Cover and refrigerate for 8 hours or overnight., For filling, combine sugar and tapioca in a small saucepan; add strawberries. Let stand for 5 minutes. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the lemon juice. Cool., Punch down dough; divide in half. On a lightly floured surface, roll each portion to 1/4-in. thickness. Cut into 2-in. squares. Spoon about 1/2 teaspoon of filling into the center of each square. Bring two opposite corners together over center of filling; pinch to seal. Place 2 in. apart on greased baking sheets. Cover and let rest for 15 minutes., Bake at 425° for 8-10 minutes or until golden brown. Remove to wire racks. Brush with melted butter; cool. For icing, in a small bowl, cream shortening and butter until light and fluffy. Gradually beat in the confectioners' sugar, vanilla and enough milk to achieve desired consistency. Drizzle over pastries.

2 premade pie crusts, at room temperature
egg wash
white sparkling sugar
strawberry, thinly sliced, to serve

Steps:

  • Preheat oven to 400°F (200°C).
  • Unroll pie crusts and cut in half. Cut out a 5-inch-wide (12-cm) square in each half. Rotate the squares to resemble diamond shapes.
  • Use leftover pie crust to cut out 4 small hearts with a heart-shaped cookie cutter. Set aside.
  • Fold four sheets of aluminum foil into small rectangles. Using your finger, slightly open the inside of each rectangle.
  • Place the foil packets in the center of each pie crust diamond.
  • Dip your finger with water and wet the edges of the left, bottom, and right flaps.
  • Apply cooking spray to the tops of the aluminum foil packets.
  • Following the folds of a real envelope, close the flaps over the foil, leaving the upper flap open.
  • Wet one side of the pastry hearts and arrange them wet side down onto the folded edges of the pastry envelopes.
  • Place pastries onto parchment paper-lined baking sheet.
  • Brush with egg wash and sprinkle with sparkling sugar.
  • Bake for 20-25 minutes, or until golden brown. Place a piece of aluminum foil over the top flaps of the envelopes if they begin to brown before the rest of the envelope.
  • Cool completely before stuffing with strawberry slices.

  • Roll out the puff pastry sheet. Place a 25-centimetre (9-inch) cake tin on the sheet of puff pastry and cut around the edges.
  • Poke holes in the pastry with a fork and set aside.
  • Pre-heat the oven to 190°C (375°F).
  • Prepare the strawberries by hulling them with a straw. Set aside.
  • Pour the sugar in a large saucepan and cook over a medium heat, until the sugar has melted and reached a light brown colour.

2 sheets puff pastry, thawed if frozen
¼ cup cream cheese, softened
1 tablespoon sugar

4 strawberries, stemmed and diced
⅓ cup raspberry
⅓ cup blueberry
1 tablespoon sugar
½ tablespoon lemon juice
½ teaspoon lemon zest
¼ cup chocolate hazelnut spread
1 banana, sliced
½ green apple, sliced
1 tablespoon brown sugar
⅛ teaspoon cinnamon
1 egg, beaten with 1 tablespoon water or milk
1 cup powdered sugar, sifted
1 tablespoon milk
¼ teaspoon vanilla extract

Steps:

  • On a lightly floured surface, roll out the puff pastry sheets to 9x12-inch (23x30-cm) rectangles. Set one pastry sheet aside and fold the other in half lengthwise, then in half crosswise twice, to form creases for 8 pockets. Unfold the pastry sheet on the prepared baking sheet.
  • Make the Strawberries 'n' Cream filling: In a small bowl, combine the cream cheese, sugar, and vanilla, and mix until smooth.
  • Make the Very Berry filling: In a small bowl, mash the raspberries, then add the blueberries, sugar, lemon juice, and lemon zest. Mix with a fork.
  • Spoon the berry mixture over the center of 2 of the 8 rectangles.
  • Use a spatula to spread the chocolate hazelnut spread over the center of 2 more rectangles, then top with the banana slices.
  • Use a spatula to spread the cream cheese mixture in the center of 2 more rectangles, then top with the strawberries.
  • Place apples slices in the center of the remaining 2 rectangles, then sprinkle with the brown sugar and cinnamon.
  • Preheat the oven to 400˚F (200˚C). Line a baking sheet with parchment paper.
  • Brush the egg wash over the pastry around the edges and between each filling, then top with the remaining puff pastry sheet. Use your fingers to press the pastry down around each filling. Once tightly pressed, use a pizza cutter or knife to cut out each pocket.
  • Seal the outside edges with a fork. Poke the top of each pocket with a fork 3-4 times to ventilate. Brush the tops with egg wash.
  • Bake for 25 minutes, or until golden brown.
  • Make the glaze: In a medium bowl, combine the powdered sugar, milk, and vanilla. Stir until smooth and thick.
  • Remove the pockets from the oven and let cool for 5 minutes. Decorate with the glaze, then serve immediately, or wrap in wax paper and freeze for up to a week. Reheat in the toaster oven.
