1 box strawberry cake mix (plus ingredients indicated on the box, such as eggs and vegetable oil)
32 ounces part-skim ricotta cheese
3/4 cup sugar
1 teaspoon vanilla extract
4 large eggs
16 ounces mascarpone
One 3.4-ounce box instant strawberry creme pudding
1 cup milk

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-by-13-inch baking pan with cooking spray.
  • Prepare the cake according to the directions on the box and pour it into the prepared pan. Set aside.
  • Combine the ricotta, sugar, vanilla, eggs and 4 ounces (1/2 cup) of the mascarpone in the bowl of a stand mixer fitted with a paddle attachment. Beat on medium speed until smooth, scraping down the sides of the bowl with a rubber spatula as needed. Gently scoop the filling onto the cake batter and cover it completely.
  • Bake until a skewer inserted in the center of the cake comes out clean and the strawberry layer has risen to the top, 50 to 60 minutes. Cool completely on a rack.

2 eggs, at room temperature
1 cup plus 1 tablespoon sugar
1/2 cup reduced-fat Greek yogurt
1/4 cup melted butter, cooled slightly
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon kosher salt
1 pound strawberries, hulled, half sliced and half halved
Honey whipped cream, for serving (see Cook's Note)

Steps:

  • Preheat the oven to 375 degrees F. Spray a 9-inch springform pan with nonstick cooking spray; line the bottom with parchment paper.
  • Combine the eggs and 1 cup of the sugar in a medium bowl and beat on high speed with a handheld mixer until thick, pale and doubled in size, about 4 minutes. Add the yogurt, melted butter and vanilla; beat for another minute. Add the flour, baking powder and salt; mix until just combined, 30 seconds. Pour half of the batter into the prepared pan and spread evenly to the edges. Sprinkle the sliced berries on top. Pour the remaining batter over the berries; spread evenly once again. Top decoratively with the strawberry halves and sprinkle with the remaining 1 tablespoon sugar.
  • Bake until a toothpick inserted in the center comes out clean, 45 minutes. Cool completely on a wire rack. Serve with honey whipped cream.

My son found this recipe in one of his Grandmother's old cookbooks - Pillsbury I think. I use Nestle's Strawberry Quik, powdered strawberry milk mix. It has become his favorite birthday cake.

1 1/2 cups all-purpose flour, sifted
1 cup sugar
1 cup nestle's strawberry milk mix
1 teaspoon baking powder
1/2 teaspoon salt
6 eggs, separated
1/2 teaspoon cream of tartar
1/3 cup water
1 teaspoon vanilla extract
1 teaspoon almond extract

Steps:

  • Sift flour with 1/2 cup sugar, Nestle's Strawberry Quik, baking powder and salt into a small mixing bowl. Combine egg whites and cream of tartar in large mixing bowl. Beat with mixer at high speed until soft mounds form. Gradually add 1/2 cup sugar; continue beating until very stiff, straight peaks form. DO NOT UNDER BEAT. Add egg yolks, water, vanilla and almond extracts to dry ingredients. Beat 1 minute at medium speed. Fold egg yolk mixture, 1/3 at a time, into beaten egg whites, gently but thoroughly, using a wire whip or rubber spatula. Pour into ungreased 10-inch tube pan. Bake at 350 for 50 to 60 minutes. Invert immediately. Cool completely before removing from pan. Cut cake horizontally to make 3 layers. Fill and top layers with Strawberry Fluff. Chill.
  • Strawberry Fluff: Mix 1 1/2 cup Cool Whip whipped topping with 1/3 cup Nestle's Strawberry Quik and 1/4 tsp almond extract until thick.
