STRAWBERRY WALNUT BREAD
This is a lovely quick bread that I enjoy making when fresh strawberries are first in season. It is a springtime treat that goes well with a cup of tea or a cool glass of milk.

STRAWBERRY WALNUT BREAD
A delicious made-from-scratch recipe given to me years & years ago by a dear family friend and amazing cook. A great way to use fresh strawberries. I like to top with butter, honey, or cream cheese.

Steps:
- 1. Mash strawberries & 1/3 cup of sugar. Set aside for one hour.
- 2. Preheat oven to 350 degrees. Beat eggs & mix with oil, sugars, cinnamon and vanilla.
- 3. Drain excess juice from the strawberries (I save to put a little bit in lemonade, tea, etc.). Add strawberries to mix above. Mix well.
- 4. Add flour, baking soda, and salt. Mix well, then add the walnuts.
- 5. Pour into either 2 greased & floured 9x5 loaf pans, mini loaf pans, or muffin tins.
- 6. For bread: bake 55 minutes. For muffins, bake about 45 mins. Enjoy!
Tips:
- Use fresh, ripe strawberries for the best flavor. If you don't have fresh strawberries, you can use frozen or dried strawberries. Just be sure to thaw the frozen strawberries before using them.
- Don't overmix the batter. Overmixing can make the bread tough.
- Add the walnuts to the batter last. This will help to prevent them from sinking to the bottom of the bread.
- Bake the bread in a preheated oven. This will help to ensure that the bread bakes evenly.
- Let the bread cool completely before slicing and serving. This will help to prevent the bread from crumbling.
Conclusion:
Strawberry walnut bread is a delicious and easy-to-make bread that is perfect for any occasion. It's moist and flavorful, with a hint of sweetness from the strawberries and a nutty crunch from the walnuts. This bread is also a good source of fiber and antioxidants. So next time you're looking for a quick and easy bread recipe, give strawberry walnut bread a try. You won't be disappointed!
