Cheeseburger Zucchini Pie image

I have not tried this recipe. I got this recipe from Obesity Help. It was posted by cotonmom2. Note from Cotonmom2 "I tried this recipe last night the only thing I would add is maybe a can of diced tomatoes or tomato sauce?"

1/2 lb lean ground beef (recipe didn't give a amount)
1 medium onion
6 ounces zucchini, shredded
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded Italian cheese blend
1/2 cup Bisquick reduced-fat baking mix
1 cup milk
2 eggs

Steps:

  • Turn oven to 400.
  • Spray a 9-inch Pan.
  • Scrambled the ground beef, then saute the onion with the zucchini for 6 minutes, season with salt and pepper.
  • Spread the mixture in the pan, put the cheese on top.
  • Mix the bisquick, milk and eggs then pour over the ground beef mixture.
  • Cook for 25 minutes.
