Yield makes 10

Number Of Ingredients 10

200g slightly salted butter, softened
50g icing sugar
2 tsp vanilla extract
200g plain flour
2 tsp cornflour
½ tsp baking powder
100g butter, softened
170g icing sugar
1 tsp vanilla extract
50g raspberry jam or strawberry jam

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line 2 baking sheets with baking parchment. Put the butter and icing sugar in a large bowl and beat with an electric hand whisk for about 5 mins until pale and fluffy. Add the vanilla extract and beat again until fully incorporated.
  • Sift in the flour, cornflour and baking powder, and fold into the mixture using a spatula until combined (the dough should have a tacky consistency). Spoon the dough into a piping bag fitted with a large star-shaped nozzle. If all the mixture doesn't fit, do it in 2 batches.
  • Pipe swirly circles 5cm diameter onto 2 baking sheets making sure there are 3cm spaces between each swirl.
  • Bake for 10-12 mins, swapping the trays over halfway through the cooking time so the biscuits are evenly baked, until pale golden and cooked through. Leave to cool on the baking sheets for a few mins, then transfer to wire racks.
  • While the biscuits cool, make the filling. Put the softened butter in a large mixing bowl and add the icing sugar. Stir together initially with a wooden spoon then switch to electric beaters or a whisk to get the buttercream fluffy and smooth. Add the vanilla extract and beat once more to combine. Transfer the buttercream to a piping bag and snip off the end.
  • Turn the biscuits over so their flat side is facing up then pipe buttercream over half of the biscuits and spread a little jam on the rest. Sandwich a jam covered biscuit together with a buttercream one and repeat until all the biscuits are used up.

STRAWBERRY WHIRL

Strawberry Whirl image

This is the best dessert ever. Very light. Wonderful after a big meal and you can make a lighter version as well. This is our favorite and I have taken it to many potlucks, baby and wedding showers and many family get togethers. You will not be disappointed.

Time 30m

Yield 16 serving(s)

Number Of Ingredients 11

1/4 cup sugar
1/2 cup melted butter or 1/2 cup margarine
2 1/2 cups graham cracker crumbs
1 (170 g) package strawberry Jell-O gelatin dessert
2 cups boiling water
1 (10 ounce) package frozen sliced strawberries
1 teaspoon lemon juice
2 (2 5/8 ounce) packages Dream Whip (or nutri whip, whipped)
1 (8 ounce) package cream cheese
1/4 cup milk
1/2 cup icing sugar

Steps:

  • CRUST: Mix and press into 9X13 pan.
  • Reserve a few crumbs to garnish the top.
  • FILLING: Dissolve the Jello in boiling water.
  • Add the strawberries and the lemon juice.
  • Let stand until fairly firm.
  • Pour over crust.
  • TOPPING: Mix the cream cheese, milk and icing sugar together. (I usually beat the cream cheese with the milk until smooth then beat in the icing sugar).
  • Mix in with the prepared Dream Whip.
  • Spread on top of strawberry layer.
  • Top with reserved crumbs.
  • CHILL in fridge until ready to serve.
  • NOTE VARIATIONS: For a different look I have kept out about 1/2 cup plain Jello (before the strawberries were added) and mixed in with the topping for a nice pink color.
  • I have also used frozen strawberries in liquid and just cut back a bit on the boiling water.
  • I have used 2 packages small Jello (instead of a large). A friend used lemon Jello and pineapple.
  • The variations are endless.
  • I hope you enjoy this as much as we do.
  • Prep time is approximate and does not include standing time.

STRAWBERRY SWIRLS

Strawberry Swirls image

Meet the Cook: My mother-in-law's apple cobbler was the inspiration for my variation. We - my husband, a grown son and I - consider it our special spring treat. And it is amazing how many family members and friends "pop over" during strawberry season! Actually, though, about any time is the right time to enjoy it. -Paula Steele, Obion, Tennessee
