PLUM GALETTE WITH STREUSEL TOPPING
Steps:
- Preheat the oven to 425 degrees F.
- For the pastry: Roll the short crust pastry 1/4-inch thick and cut into 6 (6-inch) rounds.
- Refrigerate the pastry rounds for at least 30 minutes. Cut 5 evenly spaced 1-inch slits around the edge of each pastry round (perpendicular to the edge).
- Whisk together the egg yolk and water to make an egg wash. Brush the edge of the pastry with egg wash.
- For the filling: Toss the plums with the brown sugar and cardamom. Pile an equal amount of plum mixture in the center of each pastry round. Fold the pastry around the plums, overlapping the pastry at the slits, and press firmly to seal. Place the galettes on a parchment paper lined baking sheet. Brush the outside of the pastry with egg wash.
- For the streusel topping: Combine the flour, sugar and cinnamon together. Using your fingers, cut the butter into the flour mixture until it resembles cornmeal. Sprinkle the streusel on top of each galette.
- Bake for 20 minutes. Reduce the oven temperature to 350 degrees F and bake for 20 minutes longer. Serve warm.
- Sift the flour and salt into a large mixing bowl. Using a cheese grater, grate the butter and shortening into the flour. Combine the mixture with your fingers until it resembles cornmeal. Add the ice cold water and mix with a spoon, pulling the water into the flour until a dough forms.
- With your hands, shape the dough into 2 balls and flatten them into disks. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. Store in the refrigerator for up to 4 days and in the freezer for up to 1 month.

PLUM STREUSEL COFFEECAKE
Steps:
- Preheat oven to 350°F. and butter and flour a 9-inch round or square baking pan at least 2 inches deep.
- Make streusel:
- In a food processor pulse together streusel ingredients until combined well and crumbly.
- Make cake batter:
- In a bowl with an electric mixer beat butter with sugar until light and fluffy and add eggs, 1 at a time, beating well after each addition, and vanilla. Sift in flour with baking powder and salt and beat until just combined.
- Spread cake batter in pan, smoothing top, and arrange plum slices over it in slightly overlapping concentric circles. Sprinkle streusel over plum slices and bake cake in middle of oven 1 hour, or until a tester comes out clean. Coffeecake may be made 1 week ahead: Cool cake completely in pan on a rack and freeze, wrapped well in plastic wrap and foil. Reheat cake, unwrapped but not thawed, in a preheated 350°F. oven until heated through, 35 to 40 minutes. Cool cake slightly on a rack and sift confectioners' sugar over it. Serve coffeecake warm or at room temperature.
Tips:
- Choose ripe, juicy plums: This will ensure that your muffins are flavorful and moist. If your plums are not ripe, you can roast them in the oven for a few minutes to bring out their sweetness.
- Use a combination of all-purpose flour and whole wheat flour: This will give your muffins a tender and hearty texture. You can also use all-purpose flour or all whole wheat flour, but the combination of the two is ideal.
- Don't overmix the batter: Overmixing can make your muffins tough. Mix the batter just until the ingredients are combined.
- Fill the muffin cups almost to the top: This will ensure that your muffins rise high and have a nice dome shape.
- Bake the muffins until a toothpick inserted into the center comes out clean: This will take about 20-25 minutes. Overbaking can dry out the muffins.
- Let the muffins cool in the pan for a few minutes before transferring them to a wire rack: This will help them to keep their shape.
Conclusion:
Streusel-Topped Plum Muffins are a delicious and easy-to-make treat that is perfect for breakfast, brunch, or a snack. They are moist and flavorful, with a sweet and crunchy streusel topping.
