Steps:

2 skinless, boneless chicken breast halves
2 cups Italian-style salad dressing
2 cups all-purpose flour
1 tablespoon baking powder
1 ½ cups milk
1 egg
3 cups Italian-seasoned bread crumbs
2 tablespoons butter, divided, or as needed
10 slices prosciutto, chopped into chunks
4 cups marinara sauce
canola oil as needed
1 cup shredded mozzarella cheese, or more to taste
4 Italian sub rolls
8 slices provolone cheese
1 cup grated Parmesan cheese

Steps:

  • Slice each chicken breast down the center to make 4 cutlets. Place each between 2 pieces of plastic wrap and pound to about 1/2 inch thinness with a meat mallet.
  • Marinate chicken breasts in Italian dressing in the refrigerator overnight.

24 jumbo pasta shells (about 10 ounces)
6 frozen chicken tenders (about 12 ounces)
1 pound whole-milk ricotta
1 cup grated Parmesan
1 1/2 teaspoons Italian seasoning
3 cups shredded mozzarella (about 12 ounces)
2 1/2 cups marinara sauce

Steps:

  • Position an oven rack in the center of the oven and preheat to 400 degrees F.
  • Bring a large pot of salted water to a boil. Cook the pasta shells until just slightly softened but still firm, about 7 minutes. Drain well, then rinse under cold water. Arrange the shells in a single layer on a baking sheet, without touching each other.

I made this recipe up one night to use up some ingredients I had and it was fantastic, my husband loves it, and anyone I have ever made it for raves about how good it is. It is not that hard and is very impressive. You can add mushrooms if you like or substitute some cooked and crumbled italian sausage for the bacon. The filling can be made right before or ahead of time and kept in the fridge until you are ready.

4 boneless skinless chicken breasts
1 cup Italian dressing
1 tablespoon olive oil
4 cups Baby Spinach
6 slices bacon, cooked and crumbled
1 teaspoon minced garlic (to taste)
2 cups mozzarella cheese
2 cups spaghetti sauce
1 egg, lightly beaten
2 cups Italian seasoned breadcrumbs
2 tablespoons butter, melted

Steps:

  • Marinate the chicken breasts in the italian dressing overnight.
  • In a wok or lg frying pan saute spinach in olive oil until all of it is wilted, transfer to a mixing bowl and add bacon, garlic and 1 Cup mozzarella cheese. Set aside.
  • Pre heat oven to 350.
  • Pound each chicken breast out evenly to 1/4" thick.
  • Pour 1 Cup spaghetti sauce on bottom of a 9x13 pan and spread evenly.

  • Brush each breast with some beaten egg and coat with breadcrumbs.

  • Place pan in oven and bake for 25-30 minutes or until chicken is no longer pink.
  • Take out of oven, remove the toothpicks ( I use a fork to apply light pressure to the chicken while pulling the toothpick out), and pour 1/4 cup spaghetti sauce over each breast and put 1/4 cup mozzarella cheese over sauce.
  • Return to oven and additional 5-10 minutes to melt the cheese.
  • Serve immediately. Good with pasta or roasted potatoes and steamed whole green beans.
