1 tablespoon Dijon mustard
4 fresh sage leaves

1 egg, lightly beaten
1/2 cup dry bread crumbs
1/4 cup grated Parmesan cheese
1-1/2 teaspoons butter
1-1/2 teaspoons olive oil
1/4 cup white wine or chicken broth

Steps:

  • In a large skillet, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and immediately place asparagus in ice water. Drain and pat dry., Flatten chicken to 1/4-in. thickness. Spread mustard over one side of each chicken breast. Down the center of each, place two sage leaves, a cheese slice, ham slice and four asparagus spears. 24 asparagus spears
6 bonless and skinless chicken breasts
6 tsp dijon mustard
6 fresh sage leaves (nice size)
12 slices provolone cheese
12 slices of prosciutto
3/4 to 1 c flour
1 c italian style bread crumbs
1/2 c grated parmesan cheese
3 eggs lightly beaten
olive oil or melted butter

Steps:

  • 1. In a large skillet bring 1/2 inch of water to a boil. Add asparagus; cover and boil for 3 minutes, dran and immediately place the asparagus in ice water. Drain and place on a paper towel to dry.
  • 2. Flatten your chicken breast to about 1/4 inch thickness. Spread mustard over the chicken breast and then place 1 sage leaf, 2 slices of cheese, 2 slices of prosciutto, and 4 asparagus spears down the center. Roll up and secure with toothpicks.
  • 3. Place your flour and eggs in a separate bowl. In another bowl mix your bread crumbs and parmesan cheese. Dip the chicken in the flour, then the egg, then finally the bread crumb mixture.
  • 4. Place on a meat plate and chill for at least one hour. (Note: you can do these the night before and bake them the next day if you want to). Take out of frig and place in a baking dish coated with cooking spray. Drizzle the olive oil or melted butter over the chicken. You can also just use your cooking spray.
  • 5. Bake at 350° for 20 to 25 minutes or until the chicken is nice and brown. Remove toothpicks and serve.

4 cloves garlic, minced
⅓ cup honey
4 tablespoons sweet chili sauce
1 ½ lb boneless, skinless chicken breast
2 tablespoons olive oil
½ yellow onion, finely diced
2 bell peppers, finely diced
2 cups spinach

Steps:

  • In a shallow dish or large plastic bag, add the soy sauce, buffalo sauce, garlic, honey, and sweet chili sauce. After mixing, reserve half the marinade in a separate bowl for later.
  • On a cutting board, slice the chicken breasts horizontally, making sure not to slice all the way through. Cover chicken breast with parchment or plastic wrap and use a mallet to flatten the chicken, about ⅓ inch (8 mm) in thickness.
  • Place chicken breasts in the marinade and chill for about 2 hours or overnight.

2/3 c fine dry breadcrumbs
1 Tbsp finely chopped parsley
1/2 tsp salt
1/4 tsp pepper
1/4 lb thin sliced ham diced fine
3/4 c jarlsberg or gruyere cheese
8 chicken cutlets
1/2 c flour
2 eggs slightly beaten
SAUCE
1/4 c butter
1/4 c flour
1 1/2 c milk
3/4 c shredded cheese (same as above)
salt and pepper to taste
1 pinch nutmeg

Steps:

  • 1. Mix together the bread crumbs, parsley, salt and pepper. Set aside. In a small bowl, mix together the ham and cheese. Set aside. Pound the chicken cutlets thin. Lay the chicken cutlets out and divide the ham and cheese mixture between them, placing the mixture in the center. Roll up jelly roll fashion using toothpicks if you feel it is necessary. Dredge the rolls in flour. Coat with beaten egg, then roll in reserved crumb mixture covering well.
  • 2. Sauce: In saucepan on the stove, melt butter and then add the flour. Stirring with a wisk until the mixture smells like peanut butter. Yes, put your nose down there and soon as the mixture smells like peanut butter, add the milk all at once. Whip until smooth, thick and creamy. Add spices, cheese and set aside. If you are making ahead, put a skim of butter on the top to keep the sauce from forming a skin.
  • 3. In oil about an inch deep in a skillet, heat oil to 375 degrees. Brown the rolls on all sides being sure not to crowd in the skillet. Remove from skillet and drain on paper towels. Garnish and serve with the cheese sauce over top or on the side.

1 pkg hidden valley ranch dressing mix
2 Tbsp parmesan cheese, grated
1 Tbsp olive oil or melted butter
sharp cheddar cheese (as needed)

8 slice bacon, cooked and crumbled
1 c chicken, cooked & shredded
3/4 c mayo
3/4 c milk

  • 1. First take 1 teaspoon of your ranch dressing mix and combine it with 1 1/2 T parmesan cheese. Set aside. Combine the remaining ranch mix with 3/4 C mayo and 3/4 C milk and place in the fridge to chill.
  • 2. Preheat oven to heat specified on pizza dough package. Usually it's 400-425 degrees.
  • 3. Unroll your pizza dough onto a lightly floured surface. Pat or roll the dough so it's about 12? by 8?. You're going to want to cut it into 24 squares, so just eyeball it if you need to. Use a pizza cutter to slice the dough into 24 squares. Place cheese and desired toppings on each square.
  • 4. When all of your dough squares have cheese and toppings on them, carefully lift up each square and wrap the dough around the toppings.
  • 5. I grab the four corners first and then squeeze the seams shut. Then place them seam side down in a lightly sprayed pie pan (or similar sized dish). Brush with melted butter or olive oil and sprinkle with the parmesan-ranch mixture.
  • 6. Place your rolls in the oven. I've noticed baking time really depends on the type of dough I'm using. Whether it's different brands from the store, or homemade dough, they all take different amounts of time. Set your timer for 10 minutes and check on them after that. They may take up to 15 or 20 to be done. Take them out when they're lightly golden on top. Serve them warm with a side of freshly made ranch dressing for dipping. ENJOY!!!
