1/2 cup pineapple cream cheese spread (from 8-ounce container)
1/2 cup orange marmalade
2 tablespoons butter or margarine, softened
4 eggs
1 1/2 cups milk
1 teaspoon vanilla
3/4 cup light corn syrup
1/4 cup frozen orange juice concentrate

Steps:

  • Spray rectangular baking dish, 13x9x2 inches, with cooking spray. Toast 6 slices of the bread; place in pan. Spread each slice toast evenly with cream cheese and marmalade. Butter remaining bread slices; place butter sides up on toast.
  • Beat eggs, milk and vanilla in medium bowl with wire whisk until blended. Pour over bread. Cover with aluminum foil and refrigerate at least 6 hours or overnight.

1 1/2 pounds vanilla wafer cookies
1/4 cup granulated sugar
2 tablespoons brown sugar
14 tablespoons melted butter
4 pounds cream cheese, at room temperature
1 pound granulated sugar (2 cups)
12 ounces sour cream (1 1/2 cups)
1 tablespoon vanilla extract
1/4 teaspoon salt
8 large eggs
Nonstick cooking spray
2 pounds strawberries, sliced
4 ounces granulated sugar
1/2 tablespoon guar gum
1 gallon milk
2 cups granulated sugar
3 tablespoons ground cinnamon
3 tablespoons vanilla extract
Pinch salt
8 large eggs
6 slices brioche bread
Fresh strawberries
Confectioners' sugar

Steps:

  • For the crust: Grind the cookies into a powder in a food processor, then add the granulated and brown sugars and butter. Mix until completely incorporated.
  • For the cheesecake: Preheat the oven to 250 degrees F. Add the cream cheese to a mixing bowl and beat to soften. Add the granulated sugar and beat until incorporated. Add the sour cream, vanilla and salt and mix until incorporated. Add the eggs one by one until they are all incorporated. Spray 2 cheesecake pans with nonstick spray. Divide the crust as the base of the cheesecake in both pans. Then add the cheesecake mixture on top of both crusts. Place in a water bath so the water reaches the middle of the pan and bake for 2 hours.
  • For the strawberry syrup: Add the strawberries and granulated sugar to a heatproof mixing bowl and cover. Add the mixing bowl to a water bath and bake for 45 minutes. Strain the strawberry liquid into a bowl. Reserve the strawberries for another use. Put the strawberry liquid bowl in an ice bath and add the guar gum. Mix it for 30 seconds.
  • For the french toast: In a mixing bowl, mix the milk, granulated sugar, cinnamon, vanilla, salt and eggs.
  • Make a small incision with a paring knife in the bottom part of the brioche bread slices. Insert 2 ounces of the cheesecake inside each bread slice and cover the cheesecake up with a piece of the bread. Reserve the graham crumbs for plating.
  • Preheat a griddle to medium heat. Dip each slice into the egg mixture and put onto the griddle. Cook until toasted and golden brown on both sides.
  • Cut the French toast in half and then place them on a plate with the fresh strawberries, strawberry syrup, graham crumbs and a dusting of confectioners' sugar.

1 lb loaf French bread, unsliced, cubed
8 ounces cream cheese, cubed
8 eggs
2 1/2 cups light cream or 2 1/2 cups half-and-half cream
6 teaspoons butter, melted
1/4 cup maple syrup
1/2 cup sugar
4 teaspoons cornstarch
1/2 teaspoon cinnamon
1 cup apple cider or 1 cup apple juice
1 tablespoon lemon juice
2 tablespoons butter (I like Cabot's)

Steps:

  • Grease a 13 x 9 pan.
  • Cut bread into cubes (you should end up with about 12 cups).
  • Place half bread cubes in pan.
  • Top with cream cheese cubes.
  • Top with remaining bread cubes.
  • Beat together eggs, milk, melted butter, and maple syrup.
  • Pour egg mixture evenly over bread cubes and cream cheese.
  • Slightly press down with spatula to moisten.
  • Cover with plastic wrap and refrigerate for 4 to 24 hours.

CIDER SYRUP:
1/2 cup sugar
4 teaspoons cornstarch

1/4 cup whipped cream cheese
2 tablespoons orange marmalade
4 slices sandwich, French or challah bread, crusts removed if desired
2 large eggs
1/4 cup milk
1 cup cereal flakes, such as Heritage Flakes or Corn Flakes
1 tablespoon unsalted butter or vegetable oil
Honey or pure maple syrup, for serving (optional)

Steps:

  • Use a fork to whip the cream cheese and marmalade in a small bowl until thoroughly combined. Spread the mixture evenly on 2 slices of bread and top with the remaining bread, creating 2 sandwiches. Slice the sandwiches into 1-inch-wide sticks. Set aside.

2 tablespoons (1/4 stick) unsalted butter
2 teaspoons fresh lemon juice
1 teaspoon grated orange peel

Steps:

  • Generously butter large roasting pan. Arrange bread in single layer in prepared pan, fitting closely together. Beat half and half, eggs, cinnamon and nutmeg to blend in medium bowl. Pour egg mixture over bread. Cover pan and refrigerate until bread absorbs mixture, turning once, about 3 hours. (Can be prepared 1 day ahead. Keep refrigerated.)
