1 beef flank steak (about 1-1/2 pounds)

Steps:

  • In a bowl, combine the first eight ingredients; mix well. Cut steak horizontally from a long edge to within 1/2 in. of opposite edge; open (like a book) and flatten to 1/2-in. thickness. Kosher salt and freshly ground black pepper
4 pieces thinly sliced fontina or other mild white cheese (about 4 ounces)

2 large eggs, lightly beaten
3/4 cup flour
1 cup dried bread crumbs
1 teaspoon dried thyme
Pinch cayenne pepper

  • If the braciola is more than about 1/4-inch thick, place the slices between sheets of wax paper and gently pound them. Pair off the braciola slices that are closest in size and shape. Sprinkle the meat lightly with salt and pepper and place a slice of cheese and a slice of prosciutto between each pair, folding them over if necessary so that they do not protrude beyond the edges of the braciola. Reserve a bit of the basil for garnish and place the remainder between the braciola slices.

24 uncooked jumbo pasta shells (about 6 oz)
1 jar (26 oz) tomato-basil pasta sauce
3 cups shredded mozzarella cheese (12 oz)
1 cup cottage cheese
1 cup chopped prosciutto (4 1/2 oz)
1 box (9 oz) frozen spinach, thawed, squeezed to drain
2 tablespoons chopped fresh basil leaves, if desired

Steps:

  • Heat oven to 375°F. Cook and drain pasta as directed on package. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Spread 1/3 cup of the pasta sauce over bottom of baking dish.

1 (2 pound) flank steak
5 tablespoons olive oil, divided
½ (8 ounce) package sliced fresh mushrooms
¼ cup diced celery
¼ cup chopped sun-dried tomatoes (not oil-packed)
3 cloves garlic, minced
¾ (15 ounce) jar roasted red peppers, drained
1 cup plain dry bread crumbs
¼ cup minced fresh parsley
2 tablespoons capers
½ teaspoon salt
¼ teaspoon crushed red pepper flakes
⅛ teaspoon ground black pepper
½ pound thinly sliced prosciutto
½ pound thinly sliced provolone cheese

Steps:

  • Place flank steak in the freezer for 20 minutes.

1 (10 ounce) package frozen chopped spinach
3 tablespoons extra virgin olive oil, EVOO (Divided)
3 garlic cloves, Chopped
1/2 small onion, Chopped
1/2 small red bell pepper (1/4 chopped & 1/4 cut into strips, for garnish)
2 ounces prosciutto, cut into ribbons
coarse salt
black pepper
1/4 cup Italian seasoned breadcrumbs
1/3 cup grated parmigiano-reggiano cheese
2 lbs beef eye round

Steps:

  • Defrost spinach in microwave. Wrap in clean kitchen towel and wring chopped spinach dry.
  • Place a large skillet on the stove over medium high heat. Add 2 tablespoons EVOO to hot skillet. Add garlic to oil. Add onion and red pepper, cook 1 minute. Lower heat to medium. Add the prosciutto and the spinach. Season with salt and pepper. Add bread crumbs and cheese to spinach. Turn off heat. Let stuffing cool.
  • To create the cavity for the stuffing, use a long sharp knife (like a boning knife), and cut a 1 to 2-inch hole through the center of the roast making a lengthwise slit.
