CRABMEAT STUFFED TILAPIA
This recipe came from www.tilapia.ws that turned out wonderfully. It is a rich and spicy recipe that can be used on other similar fish as well. It was difficult to roll the fillets easily, so I placed one fillet on the bottom of the casserole dish, layered the crabmeat on it and topped with another fillet of Tilapia. Larger fillets would work out better for rolling. Also one can adjust the amount of cayenne as desired. Worked out great.

- Preheat oven to 350 degrees.
- 1. In a small sauce pan heat the oil. When heated add the onions and fry for 2-3 minutes or until translucent.
- 2. Add the red peppers, lemon juice, brown sugar, garlic, parsley, black pepper and salt. bring the mixture to a boil, then reduce to a simmer and cook 5 minutes, or until the peppers are tender.
- 3. While the mixture cooks prepare your baking dish. (I use a disposable aluminum 8x8 in square cake pan because i dont like bacon grease on my good pans) Cut srips of reynolds wrap the size or your baking dish about 6 will be fine. Crinkle the strips of foil and securely place them in the bottom of your dish to make racks.
- 4. Remove the pepper mixture and process in a food processor (or blender) until smooth.
- 5. Return the mixture to the pan and stir in the bread crumbs until combined.
- 6. Spread the mixture evenly among the 4 Tilapia filets and roll them up. Wrap them in bacon using one strip of bacon per filet. If needed secure them in place with toothpicks.
- 7. Place the filet rolls over the racks to let the grease drain. Cover with reynolds wrap foil and bake in the preheated oven for 20 minutes.
- 8. In another baking dish spread the green beans evenly apart and sprinkle the top with pamesan cheese.
- 9. After the 20 minutes remove the filets and turn on the broiler. Remove the foil cover from the filets. Put the green beand and filets under the broiler and broil until the top of the bacon is crispy. Turn the filets to crisp the bottom side. If the cheese is burning too badly, take out the beans. when both sides f the bacon are crispy, take them out.
- Serve the tilapia with a big side of green beans and enjoy.

- Wash tilapia in cold water and pat dry.
- Place in a bowl.
- Pour coconut juice to cover.
- Cover bowl and refrigerate 2 - 4 hours.
- STUFFING.
- Heat Saute pan.
- Add butter and EVOO.
- Saute celery, onion, carrot until tender.
- Add garlic and saute 1 minute.
- Add wine and reduce for 1 minute.
- Add lemon juice.
- Add shrimp and spinach.
- Continue cooking until shrimp is pink and spinach is hot.
- Stir in basil, corriander, lemon pepper, salt, pepper.
- Remove from heat, put in bowl and allow to cool.
- When cool, blend in egg and breadcrumbs.
- POTATOES.
- Wash, peel, cut in half, boil till fork tender.

- Add milk, butter, salt and pepper to potatoes and whip until smooth.
- Add more milk if required to be able to spread potato.
- COMBINING.
- Spread 1/2 of the stuffing on one filet and cover with another filet.
- Place on well oiled baking sheet.
- Spread the top with some of the potato mixture.
- Turn over and cover the sides and top (like frosting a cake).
- Do the same with the other filets.
- Sprinkle with paprika.
- Bake for 20 - 25 minutes until potato is slightly brown.

- Tear 4 sheet of Reynolds Wrap Heavy Duty Aluminum Foil (12x18-inches each) set aside.
- Combine in a medium bowl the chopped onion, tomato, jalapeno peppers, cilantro, lime, and salt. Refrigerate for one hour or until ready to serve.
- Combine in another medium bowl the chopped shrimp, garlic, red bell pepper, shredded cheese, melted butter, lemon juice, parsley, and 1 1/4 cups bread crumbs. Toss to moisten evenly.
- Toss together in a shallow dish the remaining bread crumbs and garlic powder. Set aside.

- Rinse tilapia and pat dry.

- 1. By cleaning the blood line, is to cut on a buyass the dark red line in the center of the fish. Mix the stuffing by adding the cream Cheese ,Pimiento, Mushrooms, tarragon, Cayenne pepper, together.
