Categories     dessert

Time 1h50m

Yield 30 to 40 cookies

Number Of Ingredients 12

4 sticks (2 cups) salted butter, at room temperature
2 cups granulated sugar
2 large eggs
6 cups all-purpose flour, plus more for dusting
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 teaspoons vanilla extract
2 teaspoons lemon juice
1/4 teaspoon ground cinnamon
4 large egg whites
Grated zest of 1 orange
6 cups confectioners' sugar

Steps:

  • For the sugar cookie: Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment.
  • In a stand mixer, cream the butter and sugar together well. Add the eggs 1 at a time, mixing between each addition. On low speed, slowly add the flour, baking powder and salt and mix. Add the vanilla extract and 2 teaspoons water and mix just until combined; do not over mix! Refrigerate the dough for 30 minutes
  • Dust a work surface with flour. Roll out the dough about 1/4 inch thick and cut into shapes using your favorite cookie cutters. Transfer to the prepared baking sheets and bake until no longer translucent and just golden at the edges, 7 to 9 minutes. Cool slightly on the baking sheets, then transfer to a wire rack to cool completely. Continue rolling and baking any remaining dough, re-rolling scraps once.
  • For the icing: Whisk together the lemon juice, cinnamon, egg whites and orange zest in the bowl of a stand mixer. Using the paddle attachment and on medium speed, gradually add the confectioners' sugar and beat until the icing is the desired stiffness. Transfer the icing to a piping bag and pipe on the cookies in desired decorative patterns.

Provided by Renna

Number Of Ingredients 15

ICING:
1 cup real butter, softened
1 cup sugar
2 eggs
1/2 teaspoon vanilla
1/2 teaspoon almond extract (can omit almond and add 1 teaspoon vanilla)
3 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups confectioners' sugar, sifted
1 or more tablespoon milk
1 tablespoon light corn syrup
1/4 teaspoon almond extract (can use 1/2 teaspoon vanilla in place of the almond)
Food coloring

Steps:

  • In large bowl with mixer, combine butter and sugar, add eggs and extracts; Beat on high until light and fluffy. In another bowl combine flour, baking powder, baking soda and salt; gradually stir into the butter mixture until well blended. Cover bowl with plastic wrap and chill for 2 hours. Set oven to 400°F. Line cookie sheets with parchment paper. On very lightly floured surface roll out the dough into about 1/4-inch thickness. Cut into desired shapes using cookie cutters. Place cookies 2-inches apart on cookie sheet. Bake 4-6 minutes. Remove cookies to wire racks to cool completely before icing. Icing: In a small bowl mix the confectioners sugar with milk (start with 1-2 tablespoons, you will likely need more milk for the perfect spreading consistency). Beat in corn syrup and almond extract until the icing is smooth and glossy (if the icing is too thick add in a small amount more of corn syrup). Divide into as many separate bowls as you wish for different colors. Add in food coloring until desired intensity is achieved. Decorate as desired....you can use small paint brushes, piping bags or dip the cookies in the icing to add detail. Allow to set on waxed paper until icing is set. Icing will harden. Amount of cookies depends on size of cutters you use.

Tips:

  • Use unsalted butter: This will help you control the amount of salt in your icing.
  • Bring your butter and cream cheese to room temperature before using: This will make them easier to mix and will help you achieve a smooth icing.
  • Gradually add the powdered sugar: This will help you avoid lumps in your icing.
  • Use a stand mixer or hand mixer: This will make it much easier to get a smooth and creamy icing.
  • If your icing is too thick, add a little bit of milk or cream: This will help to thin it out.
  • If your icing is too thin, add a little bit more powdered sugar: This will help to thicken it up.
  • Flavor your icing with extracts, spices, or food coloring: This is a great way to customize your icing and make it your own.

Conclusion:

Sugar cookie icing is a delicious and versatile way to decorate your cookies. With so many different recipes to choose from, you're sure to find one that you'll love. Whether you like a simple glaze or a more elaborate design, there's an icing out there for everyone. So get creative and have fun!
