¼ cup margarine, softened
¼ cup sugar
1 (8 ounce) package cream cheese
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy cream, whipped
1 (12.5 ounce) can cherry pie filling (or other filling of your choice)

Steps:

  • Mix together graham cracker crumbs, margarine, and sugar in a bowl until well incorporated and crumbly. Press into a pie plate, going up the sides as much as possible.

1 ¾ cups graham cracker crumbs
½ cup butter
½ teaspoon ground cinnamon
1 (.6 ounce) package sugar free lemon flavored Jell-O®
1 cup boiling water
1 (8 ounce) package reduced fat cream cheese
2 teaspoons vanilla extract
1 cup frozen light whipped topping, thawed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine graham cracker crumbs, butter and cinnamon. Mix well and press into the bottom of a 9 inch square pan. Bake in preheated oven for 8 to 10 minutes. Remove from oven and allow to cool.
  • Dissolve lemon gelatin in boiling water. Let cool until thickened, but not set. In a large bowl, beat cream cheese and vanilla until smooth. Blend in lemon gelatin. Fold in whipped topping.

I was in the baking aisle one day and saw a can of NO SUGAR ADDED cherry pie filling. I was elated. I took it home and come up with this cheesecake recipe. It's delicious and no one in the family knew it was sugar free.

1 box(es) sugar free cheesecake instant pudding mix, dry
1 cup(s) skim milk
16 ounce(s) cream cheese room temp
2 teaspoon(s) vanilla extract
1 can(s) no sugar added cherry pie filling
1 - 9 in. baked pie shell or my sugar free recipe for crust that is posted
1 - container of sugar free cool whip

Steps:

  • In large bowl, mix first 4 ingredients until blended. Pour in pie shell. Layer Pie Filling on top of that. Chill for a couple hours. Serve with a dullop of cool whip.
  • NOTE: If you want to make your own pie filling sugar free, just take a bag of frozen unsweetened fruit. Thaw thoroughly. Put in a saucepan with 1 Cup splenda and cook until syrupy. Add 1 teaspoon of cornstarch and whisk until clear IF it needs thickened. Continue to add cornstarch if necessary but I don't think you will.

Tips:

  • Use fresh cherries. Fresh cherries have the best flavor and texture for this cheesecake. If you can't find fresh cherries, you can use frozen cherries that have been thawed and drained.
