Christmas is a time of joy, family, friends, and food. But if you have diabetes or are watching your sugar intake, the thought of all those sugary treats can be overwhelming. Cranberry Walnut Cookies are a healthy holiday treat. They can be made sugar-free and are a delicious and festive way to enjoy the holiday season. By using alternative sweeteners, such as stevia or monk fruit, and sugar-free cranberries, you can significantly reduce the amount of sugar in these cookies while still maintaining their delicious flavor and texture. CRANBERRY WALNUT OATMEAL COOKIES {GLUTEN FREE + REFINED SUGAR FREE + DAIRY FREE}
Steps:
- Preheat oven to 350F/175C degrees.
- In a large mixing bowl, whisk together oats, almond meal, tapioca or arrowroot starch, coconut sugar, baking soda and sea salt. In a separate mixing bowl, whisk together coconut oil, egg, and vanilla. Mix in wet ingredients into the dry until well combined, then fold in walnuts and dried cranberries. Mix with your hands until the mixture resembles oatmeal cookie dough.
- Chill dough for 30 minutes, then roll into balls (I used a standard ice cream scoop for even sized balls) and flatten with the palms of your hands (they will spread just a little bit). Repeat until you have about 17 cookies. Add to a cookie sheet and bake for 12-14 minutes or until browned around the edges and bottom. Cool on a wire rack for 20 minutes before serving.

SUGAR FREE CRANBERRY WALNUT COOKIES
Steps:
- Make sure that the butter is softened and not melted. Combine the butter, sweetener, eggs, and vanilla in a mixer bowl. Turn on the mixer and beat until just light and fluffy. Scrape the beaters to remove most of the wet ingredients that cling to them. Add all the dry ingredients to the top of the wet and then mix them in until just mixed. Mix in the chopped cranberries and nuts. Chill the dough for 2-3 hours in the fridge. Scoop the cookie dough out with a small cookie scoop or heaping teaspoon. Place on a prepared baking sheet and press them down to flatten them out a bit. Bake for 10-12 minutes in a 350-degree oven. Allow cookies to cool on the baking sheet for 5 min then transfer to a cooling rack to cool completely.
