1 1/2 pounds fresh sugar snap peas
1 tablespoon good olive oil
1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
Sea salt or fleur de sel, for serving

Steps:

  • Remove and discard the stem end and string from each sugar snap pod.
  • Heat the olive oil in a large saute pan over medium-high heat. Add the sugar snap peas, salt and pepper and saute, tossing occasionally for 3 to 5 minutes, until the sugar snap peas are crisp tender.
  • Place the sugar snap peas in a serving bowl, sprinkle with sea salt and serve.

1 tablespoon toasted sesame oil
3 tablespoons teriyaki sauce

2 tablespoons vegetable oil
10 ounces cremini mushrooms, trimmed and sliced
10 ounces sugar snap peas, trimmed (about 3-cups)
3 large scallions, white and light-green parts, cut into 2-inch pieces (about 1 1/2 -cups)
4 cloves garlic, minced
2 tablespoons low-sodium soy sauce
Crushed red pepper for garnish, optional

Steps:

  • Warm oil in a large skillet over medium-high heat until shimmering. Add mushrooms, snap peas and scallions and cook, stirring constantly, until snap peas are bright green and mushrooms have released their liquid, 3 to 4 minutes. Add garlic and cook, stirring, until golden, about 30 seconds. Add soy sauce and cook for 3 to 4 minutes more, stirring, until snap peas are crisp-tender. Sprinkle with red pepper, if desired. Serve.

1 1/2 teaspoons olive oil
1 tablespoon minced garlic
1 medium sweet onion, chopped (Vidalian or Maui)
2 large shallots, minced
1 large red bell pepper, cut into 2-inch strips
6 ounces portabella mushrooms, diced
2 lbs fresh sugar snap peas, trimmed (may use snow peas)
3 tablespoons lemon juice
1 1/2 teaspoons dried marjoram
1/3 cup toasted sesame seeds

Steps:

  • Let the oil get heated in a large skillet or wok; add in the garlic; stir/saute over medium-high heat for 1 minute.
  • Add in the onion, shallots, and bell pepper; stir/saute for 3 minutes.
  • Add in the mushrooms; cook for 4 minutes or until the vegetables begins to soften.
  • Add in the peas; cook for 2 minutes, stirring frequently.
  • Lower heat to med-low; add in the lemon juice and marjoram.
  • Cook for 1 minute to heat everything through.
  • Sprinkle with sesame seeds and serve immediately.
