SUGARED CRANBERRIES

These little gems are the perfect garnish for just about any dessert, and they are delicious on their own, too. They are pleasantly sweet, tart, and addictively crunchy. Standard granulated sugar is what you need here, but vanilla sugar is really nice if you have it.

Time 30m

Yield 3 cups

Number Of Ingredients 2

2 1/2 cups/500 grams sugar
3 cups/285 grams fresh cranberries

Steps:

  • Combine 1 cup water and 1 cup/200 grams sugar in a saucepan. Cook over medium-high until the sugar dissolves and the mixture comes to a simmer around the edges. Cool the syrup to room temperature.
  • When the syrup is cool, add the cranberries and stir to coat. Work in batches if necessary. Use a slotted spoon to remove the cranberries from the syrup and place them on a cooling rack set over a sheet pan to drain. Let the cranberries dry for 45 minutes. Save the syrup for cocktails or another batch of cranberries.

Let them dry completely then store in an airtight container room temperature for up to 3 days. After a few days they may start to soften and weep a bit. Cook them down into sauce or quick jam.

My family fights over this great Thanksgiving side dish that was first brought to our table by my Aunt Joan more than ten years ago. It's the only thing I've found that will convert even the most die-hard canned cranberry eater to a fresh berry advocate.

Tips:

  • Use fresh cranberries: Fresh cranberries are essential for making candied cranberries. They should be plump and firm, with no signs of bruising or mold.
  • Cook the cranberries in a single layer: This will help them to cook evenly and prevent them from sticking together.
  • Don't overcook the cranberries: Overcooked cranberries will be tough and chewy. Cook them until they are just tender, about 10 minutes.
  • Toss the cranberries in sugar while they are still warm: This will help the sugar to adhere to the cranberries and create a delicious coating.
  • Store the candied cranberries in an airtight container: Candied cranberries can be stored in an airtight container at room temperature for up to 2 weeks, or in the refrigerator for up to 6 months.

Conclusion:

Candied cranberries are a delicious and versatile treat that can be enjoyed in a variety of ways. They can be added to trail mix, granola, yogurt, or oatmeal. They can also be used to decorate cakes, cookies, and other desserts. With just a few simple ingredients and a little bit of time, you can easily make your own candied cranberries at home.
