JERRY'S SUGARED PECANS

Jerry's Sugared Pecans image

I think making someone else's recipes is a wonderful way to remember them when they're no longer with us. Garth's brother Jerry loved my cooking, and he was a good cook himself. He always made me feel he truly appreciated the meals I made for him, and I loved him for it. He had a wonderful smile and a great spirit. Jerry brought these pecans out to the house one day, and I only stopped eating them when they were gone! The butter and sugar make them crunchy, sweet, and rich.

Yield makes 4 cups

Number Of Ingredients 5

1/2 cup (1 stick) butter, melted
3 large egg whites
1 cup sugar
1 teaspoon ground cinnamon
4 cups pecan halves

Steps:

  • Preheat the oven to 350°F.
  • Line a large baking sheet with sides with aluminum foil. Pour the butter onto the lined sheet. In a large bowl, mix the egg whites, sugar, and cinnamon. Add the pecan halves and toss until they are fully coated. Spread the pecans onto the baking sheet. Bake for 30 minutes, stirring the pecans every 10 minutes. Cool on the baking sheet for 10 to 15 minutes before serving.
  • These pecans will still be a bit wet and gooey when you take them out of the oven. As they cool on the baking sheet, they will get crunchy.

CURRIED PECANS

An excellent snack for most any occasion--holidays, camping, sporting event get togethers, lunchboxes, etc. We can't stop eating them! These make a great gift, just cut a piece of cellophane and wrap into a cone shape tied with a colorful ribbon, or place in a pretty tin. They will be appreciated.

Categories     Lunch/Snacks

Time 1h30m

Yield 1 pound

Number Of Ingredients 7

1 lb pecans, whole
1 egg white
1 tablespoon water
2 tablespoons sugar
2 teaspoons orange rind, finely grated
1 teaspoon seasoning salt (such as Lawry's)
1 teaspoon mild curry powder (sometimes I use 1/2 hot- 1/2 mild for a little more kick)

Steps:

  • Preheat oven to 250°F.
  • In a medium bowl, mix egg white with water until a bit frothy.
  • Stir in the pecans and mix until pecans are well coated with egg white mixture.
  • Combine sugar, orange rind, seasoned salt and curry powder in a Ziploc bag.
  • Remove pecans from egg white bowl, and add to the bag. Discard any remaining egg white mixture.
  • Seal up the bag and shake vigorously to coat pecans with spices.
  • Spread nuts onto two baking sheets and place in oven. I line mine with parchment paper.
  • Bake pecans for 20 minutes, then remove from oven and stir and spread out on pan again.
  • Turn off oven, place pecans back in the oven, and crack oven door. Let them remain there for 45 minutes to 1 hour, or until they are crisp.
  • Enjoy!

Tips:

  • Choose fresh pecans: Fresh pecans will have a plump, full appearance and a light tan color. Avoid pecans that are shriveled or have dark spots.
  • Toast the pecans before using: Toasting the pecans before adding them to the recipe will enhance their flavor and make them more crunchy. To toast pecans, spread them in a single layer on a baking sheet and bake at 350°F for 5-7 minutes, or until they are fragrant and golden brown.
  • Use a heavy-bottomed saucepan: A heavy-bottomed saucepan will help to prevent the sugar from burning.
  • Stir the mixture constantly: Stirring the mixture constantly will help to prevent the sugar from crystallizing and will also help to evenly coat the pecans.
  • Use a candy thermometer: A candy thermometer will help you to ensure that the mixture reaches the correct temperature for making candied pecans.
  • Let the pecans cool completely before storing: Allow the pecans to cool completely before storing them in an airtight container. This will help to prevent them from sticking together.

Conclusion:

Candied pecans are a delicious and versatile snack that can be enjoyed on their own or used as a topping for desserts, salads, and other dishes. They are also a great gift for friends and family. With a little time and effort, you can easily make candied pecans at home using the recipes provided in this article. So next time you are looking for a sweet and crunchy snack, try making candied pecans. You won't be disappointed!
