1 teaspoon cornstarch
3/4 cup plus 1 tablespoon sugar
1 large egg plus 1 large egg yolk
1 cup milk
1/2 teaspoon pure vanilla extract
2 tablespoons unsalted butter
1/3 cup mascarpone cheese (Italian cream cheese)
1 pint mixed berries, such as raspberries, blackberries, blueberries
Confectioners' sugar for tops

Add this mixture to remaining milk in saucepan, and cook over a very low flame, whisking constantly. When mixture bubbles and thickens, remove from heat, and continue whisking for 1 minute. Transfer to a bowl, and stir in vanilla and butter. Refrigerate until chilled. (The dessert can be prepared to this point up to 2 days ahead.)

Number Of Ingredients 18

1 pint blueberries
1 pint raspberries
1 pint blackberries
1 pint strawberries, hulled and sliced in half
1/2 cup granulated sugar, plus more, for dusting
Pinch cinnamon
2 tablespoons cornstarch
1/2 lemon, juiced
1 recipe Blueberry Scone Dough, recipe follows
Melted butter

1/3 cup sugar
1/4 cup unsalted butter, chilled and cut in chunks

1 egg
1 pint fresh blueberries

SUMMER BERRY STACK

Summer Berry Stack image

I created this recipe after having a similar cake in the cafe of a local bookstore I worked at years ago. I never forgot how delicious the dessert was, with the tartness of berries and citrus that complemented perfectly with the sweetness of the cake, the cheesecake layer, and white chocolate, so I decided to recreate it myself. The dessert from the cafe was actually mass-produced and shipped in frozen, so this is a fresh, homemade version that tastes even better than the original, if I do say so myself (haha). This elegant cake mix cheesecake stacks tart summer berries and lemon curd against creamy lime whip.

FRESH SUMMER BERRY GRATIN

Adapted from America's Test Kitchen

Provided by Rosemary Stelmach

Time 30m

Number Of Ingredients 9

2 1/4 cups blackberries, blueberries and/or raspberries ((about 11 ounces))
3/4 cup strawberries, hulled and halved or quatered ((about 4 ounces))
2 teaspoons granulated sugar
pinch of salt
3 large egg yolks
3 tablespoons granulated sugar, divided
3 tablespoons dry white wine
2 teaspoons packed light brown sugar
3 tablespoons heavy or whipping cream, chilled

Steps:

  • Arrange berries in a shallow baking dish. Top with the sugar and salt. Gently toss to combine; set aside.
  • If making individual gratins: Line rimmed baking sheet with aluminum foil. Toss berries, sugar, and salt together in bowl. Divide berry mixture evenly among 4 shallow 6-ounce gratin dishes set on prepared sheet; set aside.
  • Whisk the egg yolks, 2 tablespoons plus 1 teaspoon granulated sugar, and wine together in medium heatproof bowl until the sugar has dissolved, about 1 minute. Set the bowl over saucepan of barely simmering water and cook, whisking constantly, until the mixture is frothy. Continue to cook, whisking constantly, until the mixture is slightly thickened, creamy, and glossy, 5 to 10 minutes (when done, the mixture will form loose mounds when dripped from the whisk). Remove the bowl from the saucepan and whisk constantly for another 30 seconds to cool slightly. Transfer the bowl to the refrigerator and chill until the egg mixture is completely cool, about 10 minutes.
  • Meanwhile, adjust the oven rack 6 inches from broiler element and preheat broiler. Combine brown sugar and remaining 2 teaspoons granulated sugar in a small bowl.
  • Whisk the heavy cream in a small bowl until it holds soft peaks, 30 to 90 seconds. Using a rubber spatula, gently fold whipped cream into the cooled egg mixture. Spoon the zabaglione over the berries and sprinkle the sugar mixture evenly on top. Let sit at room temperature for 10 minutes, until the sugar dissolves.
  • Broil the gratin until the sugar is bubbly and caramelized, 2 to 4 minutes. Keep a constant watch on the progress to prevent overbrowning. Serve immediately.

FRESH BERRY GRATIN

Fresh Berry Gratin image

From America's Test Kitchen "Though a mixture of berries offers a wonderful combination of color, flavor, and texture, it's also fine to use just one or two types of berries. One-half pint of fresh berries equals about one cup of fruit. Later in the season, ripe, peeled peach or nectarine slices can be used in combination with blueberries or raspberries. We recommend using only fresh fruit, but if you must use frozen, raspberries are the best option. Do not thaw them before baking. Avoid using a metal pie pan that may react with the acidity of the fruit and impart an "off" metallic flavor. Serve the fruit gratin with lightly sweetened whipped cream or vanilla ice cream."

FRESH BERRY GRATIN

Fresh Berry Gratin image

Provided by Florence Fabricant

Categories     dessert, side dish

Time 40m

Yield 6 to 8 servings

Number Of Ingredients 5

1 pint raspberries
1 pint strawberries
3/4 cup kosher for Passover sweet amaretto or other liqueur
6 egg yolks
1/3 cup sugar

Steps:

  • Pick over the raspberries. Hull the strawberries and slice them in half. Mix the berries with two tablespoons of the liqueur. Refrigerate.
  • Place the egg yolks in a bowl that will fit over a pan of simmering water. Beat the egg yolks until they have thickened. Beat in one-quarter cup of the sugar. Set the bowl over a pan of simmering water and beat the mixture vigorously over low heat.
  • Add half the remaining amaretto and continue beating. As the egg mixture thickens and lightens, gradually add the remaining amaretto. Continue beating the mixture until it is very thick and light, taking care to regulate the heat so the yolks do not coagulate.
  • Remove the pan from the heat, stir the mixture again and refrigerate it until just before serving time.
  • Preheat a broiler. Spread the berries in a shallow gratin dish at least nine inches in diameter. Spread the egg-yolk mixture over the berries, covering them completely. Sprinkle with the remaining sugar.
  • Place the gratin under the broiler and cook for a minute or two, just until the top becomes brown and glazed. Place the gratin dish on a serving dish and serve at once, gently scooping portions of berries and gratin onto each plate.

2 pints blackberries
1/2 cup sugar
2 tablespoons all-purpose flour
2 tablespoons freshly squeezed lemon juice
Dash of ground cinnamon
Pate Brisee for Summer Berry Cobbler

SUMMER BERRY CREAM CAKE

Summer Berry Cream Cake image

A sweet ending for a summer solstice party, this spongecake is light and not too sweet, and the cream and berries make it seem almost more of an unmolded trifle than a cake. I seem to remember that in Norway alcohol is poured over the split sponge, but here I've moistened the cake with a strawberry purée. You can use any fruit.

Categories     cakes, dessert

Time 1h30m

Yield 12 servings

Number Of Ingredients 17

Vegetable oil or nonstick vegetable oil spray
4 large eggs
1 cup sugar
1 teaspoon vanilla extract
Finely grated zest of 1 lemon
1 cup flour
2 cups strawberries, hulled
2 tablespoons confectioners' sugar
1 tablespoon lemon juice
3/4 cup blueberries
3/4 cup blackberries
3/4 cup red raspberries
1/2 cup red currants or golden raspberries
2 cups heavy cream
1 teaspoon vanilla extract
1 cup strawberries, hulled
1/2 teaspoon confectioners' sugar

Steps:

  • To prepare cake, first heat oven to 350 degrees. Oil or spray a 10-inch springform pan, and line bottom with parchment paper.
  • Using an electric mixer at high speed, whisk eggs and sugar together until they triple in volume, becoming thick and airy. Add vanilla and lemon zest, and whisk to combine. Reduce speed to medium-low, and gradually add flour. Remove bowl from mixer, give a final fold with a spatula and pour into prepared cake pan. Bake until risen and light golden brown, 25 to 30 minutes. Cool pan on wire rack 10 minutes, and remove sides from pan.
  • When cake is cool use a long, thin knife to split it into 2 thin disks. Place bottom half cut side up on a serving platter; place other half cut side up on a large piece of foil. In a blender, combine 2 cups strawberries, confectioners' sugar and lemon juice. Purée until smooth. Set aside 1/4 cup purée, and divide remaining purée between two cake layers, pouring over cut sides and spreading with a rubber spatula.
  • In a large bowl, combine reserved 1/4 cup purée with 1/2 cup blueberries, 1/2 cup blackberries, 1/2 cup red raspberries and currants or golden raspberries. Fold gently to mix.
  • Whisk heavy cream with vanilla until thick but still soft. Spread half over cake sitting on serving dish. Top with fruit mixture, and place remaining cake half on top, cut side down. Spread remaining cream on top. Cut strawberries into halves or quarters, and place in a bowl. Add remaining 1/4 cup each of blueberries, blackberries and raspberries, and toss to mix. Arrange berry mixture on top of cake, and dust with confectioners' sugar.
