2 tablespoons fresh lemon juice
2 tablespoons chopped fresh thyme
Kosher salt and freshly ground black pepper

1 pound chicken or turkey breast, cut into 1-inch pieces
1 small onion, cut into 3/4-inch dice (about 1 cup)
1 red bell pepper, seeded and cut into 3/4-inch dice (about 1 cup)
2 cloves garlic, minced
2 small summer squash, seeds removed and cut into a 3/4-inch dice (about 1 1/2 cups)
8 to 10 small cherry tomatoes, mixed colors
1/3 cup loosely packed fresh basil leaves
Rice, for serving

Steps:
