1/2 medium navel orange, peeled and sectioned
1/2 medium kiwifruit, peeled and sliced
1/3 cup halved seedless red grapes
1/4 cup sliced peeled apple
1/4 cup diced honeydew melon
1/4 cup fresh blueberries
1 tablespoon orange juice
1-1/2 teaspoons honey
3/4 teaspoon lime juice
1/3 cup sliced ripe banana

Steps:

  • In a small salad bowl, combine the first six ingredients. In a small bowl, combine the orange juice, honey and lime juice. Drizzle over fruit mixture; toss to coat. Chill until serving. Add banana just before serving. Serve with a slotted spoon.

This salad is tastier the longer you can let it soak in its juices. I prefer 3 to 4 hours in the refrigerator before I serve it. Enjoy.

⅔ cup fresh orange juice
⅓ cup fresh lemon juice
⅓ cup packed brown sugar
½ teaspoon grated orange zest
½ teaspoon grated lemon zest
1 teaspoon vanilla extract
2 cups cubed fresh pineapple
2 cups strawberries, hulled and sliced
3 kiwi fruit, peeled and sliced
3 bananas, sliced
2 oranges, peeled and sectioned
1 cup seedless grapes
2 cups blueberries

Steps:

  • Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
  • Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.

3 cups cubed (1-inch) seedless watermelon
1 large white peach, pitted and cut into small cubes
1 large nectarine, pitted and cut into small cubes
1 black plum, pitted and cut into small cubes
1 cup fresh blueberries
½ cup seedless red grapes, halved
½ cup shredded coconut
1 teaspoon ground cinnamon
½ cup nondairy whipped topping

Steps:

  • Gently toss the watermelon, peach, nectarine, plum, blueberries, and grapes together in a large bowl. Sprinkle the coconut and cinnamon over the fruit mixture and lightly stir to mix. 1/4 teaspoon salt
2 teaspoons cardamom
1/4 cup Splenda granular, sugar substitute (or sugar)
3/4 cup nonfat yogurt (or fat free sour cream)
2 cups cantaloupe balls (or cubes)
2 cups watermelon balls (or cubes)
1/2 cup blueberries
1/2 cup blackberry
1/2 cup fresh pineapple, cubed
1/4 cup walnuts, roughly chopped (or nuts of your choice)
fresh basil leaf, roughly chopped (optional)

Steps:

  • In a small bowl whisk together nonfat yogurt, splenda, cardamom and salt, set aside.
  • Combine the rest of the ingredients in a large bowl, carefully mix. (fresh basil leaves, roughly chopped, may be added if using).
  • Pour nonfat yogurt mix over the fruit and carefully stir to coat.
  • Alternately, the nonfat yogurt mix can be served on the side, or as a topping on each serving.

1/2 cup raspberry jam (seedless)
3 tablespoons fresh lime juice
