SUMMER PASTA SALAD WITH CLAMS

Summer Pasta Salad With Clams image

We absolutely love a summer pasta salad. A great dinner for two or a side salad for four, this is a great way to enjoy clams when you don't want a chowder. You can use fresh clams if you like, I use canned with no apologies! It's less messy...

Time 40m

Yield 3 quarts, 6 serving(s)

Number Of Ingredients 13

1 tablespoon olive oil
1/2 cup onion, chopped
2 minced garlic cloves
16 ounces pasta, about the size of the clams
1 -2 small zucchini, diced
2 (10 ounce) cans clams, undrained
1 tablespoon parsley, fresh, chopped
1 tablespoon basil, fresh, chopped
1 -2 tomatoes, diced
1 lemon, juice and zest
salt and pepper
1 dash cayenne pepper
1 tablespoon chives, chopped for garnish

Steps:

  • Cook a box of pasta, drain and set aside. I choose to use a pasta that is similar in size to the clams.
  • Add olive oil to a hot dutch oven or a pan large enough to hold all ingredients. Add onion and cook until translucent.
  • Add the diced zucchini and garlic cooking until zucchini is nicely browned, stir frequently.
  • Add clams with liquid, parsley and basil. Turn off heat. Add tomato, lemon zest and juice. Add pasta to mixture. Mix well and serve.

SPAGHETTI WITH CLAMS

Time 30m

Yield 4 servings

Number Of Ingredients 10

1 pound dried spaghetti
1/2 cup extra-virgin olive oil
2 shallots, thinly sliced
5 to 7 cloves garlic, finely chopped
2 1/2 pounds Manila clams, scrubbed clean
1/2 cup fresh parsley, chopped
1/2 cup dry white wine
2 tablespoons unsalted butter, diced into small cubes
Sea salt and freshly ground black pepper
1 lemon, zested, for garnish

Steps:

  • In a large pot, bring to a boil 6 quarts of salted water. Add pasta, stirring constantly in the beginning to prevent it from sticking together. Cook until al dente, about 8 minutes.
  • Meanwhile, heat the olive oil in a large saute pan. When almost smoking, add shallots and garlic and saute until soft and translucent, about 3 to 4 minutes, being careful not to burn the garlic. Add the clams and wine. Cover and simmer for 6 to 8 minutes or until most clams have opened.
  • Add 2 tablespoons chopped parsley. Whisk in butter to thicken sauce slightly.
  • Drain pasta in a colander. Do not rinse pasta with water - this will remove the pasta's natural starches. Place pasta into the clam saute pan and mix thoroughly. Check seasoning.
  • Pour pasta into large serving bowl. Zest lemon over the dish, being carefull not to zest the white part of the lemon, which is bitter. Garnish with remaining parsley. Serve immediately.

SUMMER PASTA SALAD WITH TUNA

Summer Pasta Salad With Tuna image

This is the quintessential summer comfort food. When it was too hot to cook or eat a heavy dinner, my mother would often make this as a light summer meal. The leftovers taste great the next day! NOTE: Many of the spices can be adjusted to taste. I like to experiment with new flavors, like adding dill or curry powder. (cooking time is boiling the pasta and eggs, while prep time is chopping and mixing)

Time 35m

Yield 8 serving(s)

Number Of Ingredients 12

16 ounces elbow macaroni (or other small pasta, shells, radiatore, bowties)
3 (6 ounce) cans tuna
4 hardboiled egg, chopped
2 stalks celery, diced small
1 small onion, diced small
4 -5 tablespoons mayonnaise (or more to taste)
1 teaspoon lemon juice
2 teaspoons black pepper
1 teaspoon seasoning salt
1 teaspoon garlic powder
1 tablespoon sweet pickle relish
3 -4 dashes hot sauce (we like Frank's Red Hot)

Steps:

  • Boil pasta as directed until al dente. Drain and rinse with cold water to stop the cooking. (I also boil the eggs at this time and rinse then in cold water when finished).
  • In a large salad bowl, combine chopped eggs, diced onion, celery, mayo, lemon, spices, relish, and hot sauce.
  • Drain the tuna well and flake into the bowl.
  • Make sure the pasta is relatively dry (a little water clinging to them keeps the salad moist and cuts down the mayo needed).
  • Thoroughly mix the salad and chill if desired.
  • Serve in bowls or on a bed of lettuce.

Tips:

  • Choose fresh, high-quality ingredients. This will make a big difference in the flavor of your salad.
  • Don't overcook the clams. They should be cooked just until they are opaque.
  • Use a variety of vegetables in your salad. This will add color, texture, and flavor.
  • Make sure your dressing is well-balanced. It should be flavorful, but not too oily or vinegary.
  • Serve your salad chilled. This will help the flavors to meld together.

Conclusion:

Summer pasta salad with clams is a delicious and easy-to-make dish that is perfect for a summer party or potluck. With its fresh, bright flavors and beautiful presentation, this salad is sure to be a hit. So next time you're looking for a light and refreshing meal, give this recipe a try.
