SUMMER PINEAPPLE FLUFF
This is a delicious summer salad with a tropical flair that has been a family favorite my whole life, and probably longer. Pineapple, marshmallows, and whipped cream make this salad good as a side dish, or as a cool and refreshing dessert. Overnight refrigeration is the most important step to allow the marshmallows to fluff.

MARSHMALLOW PINEAPPLE FLUFF DESSERT
This recipe is from my grandmother. She made it every summer till she passed away, and the thought of it always brings back fond memories. After she died I looked everywhere for it with no luck, until this last Easter when I was looking through my moms cookbooks (She was given all of my grandmothers books). Down on the bottom of a page I notice my grandmothers writing and it was this recipe that she had written in. What a gift! It makes me cry just writing about it. I'm so excited to be able to share it with others and help my grandmother's gift of cooking live on. Hope you like it!

Tips:
- Choose ripe pineapple. Ripe pineapple is sweeter and more flavorful than unripe pineapple. Look for pineapple that is golden yellow in color and has a slightly sweet smell.
- Use fresh or frozen pineapple. Fresh pineapple is ideal for this recipe, but frozen pineapple can also be used. If using frozen pineapple, thaw it completely before using.
- Chill the pineapple and cream cheese before using. This will help the fluff to set up properly.
- Use a stand mixer or hand mixer to whip the cream cheese and pineapple. This will make the fluff light and fluffy.
- Garnish the fluff with fresh pineapple, mint, or whipped cream. This will add a touch of elegance to your dessert.
Conclusion:
Pineapple Fluff is a delicious and refreshing dessert that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences.
