Raspberry Chicken is probably my most-requested main dish at potlucks. I don't mind making it often. It's quick to fix...and always gets "cleaned up"! There are many fruit growers in our area of Oregon, and my husband and I enjoy picking fresh ingredients for recipes like this when we can.

8 boneless skinless chicken breast halves (4 ounces each)
2 tablespoons all-purpose flour
4-1/2 teaspoons butter
1 tablespoon canola oil
1/2 to 3/4 cup chicken broth
6 tablespoons raspberry vinegar
1/2 cup heavy whipping cream
Fresh raspberries to garnish

Steps:

  • Coat chicken with flour. Melt butter with oil in large skillet. Brown chicken, turning once. Add broth and vinegar to the skillet., Bring to a boil. Reduce heat; simmer, uncovered, for 12-15 minutes or until chicken juices run clear. Remove chicken to serving platter and keep warm. Add cream to skillet. Bring to a boil. Boil for 2 minutes or until slightly thickened, stirring occasionally. Serve sauce with chicken.

4 boneless, skinless chicken breast cutlets
Kosher salt and freshly ground black pepper

1/4 cup olive oil
4 cloves garlic, chopped
1 large shallot, chopped
1 cup chicken stock
1/2 cup white wine
6 ounces cremini mushrooms, sliced
1 cup fresh raspberries
1 tablespoon unsalted butter
1 tablespoon balsamic vinegar
1 teaspoon grated lemon zest

Steps:

  • Season the chicken with some salt and pepper. Heat a large skillet over medium heat and add the olive oil. Once the oil is hot but not burning, add the chicken and sear for 3 minutes on each side. Remove from the skillet and set aside.
  • Using the same skillet, add the garlic and shallot and cook over medium heat for 1 minute. Add the chicken stock and wine and cook until slightly reduced, about 10 minutes. Add the sliced mushrooms and lower the heat to a simmer. Return the chicken to the skillet, cover and cook until the chicken is cooked through, an additional 10 minutes. 1 tbsp olive oil
4 boneless skinless chicken breasts
200g pack cherry tomatoes
3 tbsp pesto
3 tbsp crème fraîche (half fat is fine)
fresh basil, if you have it

  • Heat the oil in a frying pan, preferably non-stick. Add the chicken and fry without moving it until it takes on a bit of colour. Turn the chicken and cook on the other side. Continue cooking for 12-15 mins until the chicken is cooked through. Season all over with a little salt and pepper.

¼ cup fresh lime juice
2 tablespoons sunflower oil
1 jalapeno pepper, seeded and chopped
2 cloves garlic, minced
1 (1 inch) piece fresh ginger root, minced
1 teaspoon ground coriander
2 tablespoons brown sugar
2 tablespoons grated lime zest
6 (6 ounce) skin-on, boneless chicken breasts
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • Whisk the soy sauce, lime juice, sunflower oil, jalapeno pepper, garlic, ginger, coriander, brown sugar, and lime zest together in a bowl until the sugar dissolves. Place the chicken into a resealable plastic bag, and pour the marinade overtop. Mix to coat chicken, then seal bag, and refrigerate at least 2 hours.
  • Heat a large, nonstick skillet over medium-high heat. Remove the chicken from the marinade, and shake off excess. Place into skillet, skin-side down, and cook until the skin crisps, about 4 minutes. Turn chicken over, and continue cooking on the other side until no longer pink in the center. Once done, remove the chicken and keep warm. Pour the remaining marinade into a skillet. Dissolve cornstarch in water, and stir into the sauce until thickened and clear. Bring the mixture to a boil, reduce heat to medium-low, and simmer 5 minutes. Serve chicken with sauce.

1 red onion, diced

I have recently edited the recipe to make the text and instructions clearer. This dish is Oh SO YUMMY! I served it with a wild rice pilaf. When I doubled the recipe recently, I added 1/3 white wine vinegar and 1/3 red wine - It was AMAZING! Also, I highly recommend marinading overnight, as opposed to only 30 mins.

2 tablespoons mccormick Montreal chicken seasoning
1/2 cup water
1/3 cup white wine vinegar
2 teaspoons cornstarch
1/2 cup raspberry preserves
2 lbs boneless chicken breasts

Steps:

  • In a small saucepan over medium heat, blend first 4 ingredients until cornstarch is completely dissolved - To avoid lumps, I mix the dry ingredients first, then add them to the liquids.
  • Stirring constantly, bring to a boil over medium heat, until mixture thickens (approx. 4-6 min). Add preserves, and stir until melted. Remove saucepan from burner and allow mixture to cool completely.
  • Place chicken in a self closing plastic bag. Reserve l/3 cup marinade, then pour remaining marinade over chicken. Close bag and turn to coat. Refrigerate 30+ minutes.
  • Remove chicken from marinade. Place chicken on grill over medium heat. Grill approximately 10 minutes or so until done, turning occasionally and basting with reserved marinade.

1/3 cup seedless raspberry spreadable fruit
3 tablespoons reduced-sodium soy sauce
1 teaspoon spicy brown mustard
