CREAMY SUMMER SQUASH SOUP

Time 35m

Yield 6

Number Of Ingredients 10

6 small yellow summer squash, trimmed and coarsely chopped
1 large zucchini, trimmed and coarsely chopped
2 cups vegetable stock
1 cup half-and-half cream
2 tablespoons chopped fresh tarragon
1 cup shredded Cheddar cheese
ground white pepper to taste
coarse sea salt to taste
2 tablespoons lemon juice, or more to taste
1 teaspoon chopped fresh tarragon

Steps:

  • Place the summer squash, zucchini, vegetable stock, half-and-half, and tarragon into a large soup pot; bring to a boil, reduce heat to a simmer, and cook until the vegetables are tender, about 10 minutes.
  • Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until nearly smooth, and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot.
  • Sprinkle the Cheddar cheese into the hot soup, and allow to melt; stir until thoroughly mixed. Stir in the lemon juice, and top with a sprinkling of tarragon to serve.

INSTANT POT SUMMER SQUASH AND BASIL SOUP

Instant Pot Summer Squash and Basil Soup image

Rich and creamy summer squash and basil soup made in the Instant Pot for convenience - Made with simple ingredients and no added cream!

Provided by Lauren

Categories     Soup

Time 18m

Number Of Ingredients 10

1 Tbsp olive oil
1 Tbsp butter ((can also use another tablespoon of olive oil, but the butter gives it something special!))
1 cup yellow onion (chopped)
4 garlic cloves (minced)
3 summer squash ((about 8-10 ounces EACH), chopped into thin half moons)
3 1/2 cups water
1/3 cup fresh basil ((lightly packed), chopped roughly)
1/2 lemon ((juice only))
1/2 tsp sea salt (plus more to taste)
black pepper (to taste)

Steps:

  • Hit 'saute' on your Instant Pot.
  • Add the oil, butter, onion, and garlic and cook for 3-5 minutes until softened.
  • Add in the squash and cook for another 2-3 minutes.
  • Stir in the water, salt, and pepper and close and lock the lid (make sure the steam release valve is set to 'sealing'.
  • Press 'manual' and set the Instant Pot to 8 minutes (high pressure).
  • Once the soup has completed cooking, let the pressure naturally release for 10 minutes (meaning, don't frickin' touch it!). It will read: LO10 when 10 minutes has passed.
  • Release the remaining pressure by turning the steam release valve to 'venting' and open the lid when the float valve drops.
  • Add in the basil and lemon juice and place the lid back on top for just a minute to let the heat infuse the basil.
  • Open the lid for the final time and blend the soup either with an immersion or high speed blender until smooth. If you use a high speed blender, you may consider waiting until the soup has cooled significantly, as to avoid burning yourself or damaging your blender.
  • Add in more salt, pepper, or lemon juice, as desired.

TOMATO SUMMER SQUASH SOUP

Tomato Summer Squash Soup image

This is a great recipe to use food from the summer garden. Although the recipe calls for canned tomatoes, one could add 2 cups fresh tomatoes. I used canned tomatoes with basil, oregano & garlic seasoning. I also sauteed the vegetables in olive oil instead of the broth. DH said this is great! Tips:

  • Choose the right squash: Summer squash with thin skins, such as zucchini and yellow squash, are best for this soup. Butternut squash or kabocha squash can also be used, but they may need to be peeled and cubed before cooking.
  • Don't overcrowd the pot: When sautéing the vegetables, do it in batches if necessary to avoid overcrowding the pot. This will help the vegetables brown evenly.
  • Use a good quality vegetable broth: The broth is a key flavor component in this soup, so it's important to use a good quality one. You can use store-bought or homemade broth.
  • Season to taste: Be sure to taste the soup before serving and adjust the seasonings as needed. You may want to add more salt, pepper, or herbs.
  • Garnish with fresh herbs: Fresh basil or chives are a great way to garnish this soup and add a pop of flavor.

Conclusion:

Summer squash soup is a delicious and easy-to-make soup that's perfect for a light lunch or dinner. It's also a great way to use up summer squash from your garden. With its creamy texture and fresh basil flavor, this soup is sure to be a hit with your family and friends.
