This homemade peanut-free butter is sweetened with cranberries for a great spread on cut celery, whole grain breads, and fruit. It also pairs well with soft cheese (don't add more salt though). Feel free to try other dried fruits as well, such as blueberries, cherries, or apples.

Tips:

  • Choose the Right Sunflower Seeds: Opt for raw, unsalted, and unroasted sunflower seeds to ensure the freshest and most flavorful butter.
  • Activate the Sunflower Seeds: Soaking the sunflower seeds overnight or for at least 8 hours helps activate their enzymes, making them more digestible and nutritious.
  • Roast for Enhanced Flavor: Roasting the sunflower seeds before blending adds a nutty and toasty flavor to the butter.
  • Use a High-Quality Food Processor: A powerful food processor is essential for achieving a smooth and creamy sunflower seed butter. A blender may not be strong enough to break down the seeds effectively.
  • Process Patiently: Be patient during the blending process. It may take several minutes for the sunflower seeds to reach the desired consistency. Stop the blender occasionally to scrape down the sides and ensure even blending.
  • Add Liquid as Needed: If the sunflower seed butter becomes too thick, add a small amount of liquid, such as water, oil, or soy milk, to achieve the desired consistency.
  • Store Properly: Store the sunflower seed butter in an airtight container in the refrigerator for up to 2 weeks. For longer storage, freeze the butter for up to 6 months.

Conclusion:

Sunflower seed butter is a versatile and nutritious spread that can be enjoyed in various ways. With its rich flavor and creamy texture, it is a delicious alternative to traditional nut butters. Whether you use it as a spread on toast, a dip for fruits and vegetables, or an ingredient in your favorite recipes, sunflower seed butter adds a unique and satisfying touch to any meal. Experiment with different recipes and discover the many ways to incorporate this healthy and delicious spread into your daily diet.
