8 ounces Mexican chorizo (2 links), casing removed
Kosher salt and freshly ground black pepper
2 cups white wine
1 cup heavy cream, at room temperature
Two 5-pound bags P.E.I. mussels, cleaned
1/2 cup chopped fresh cilantro leaves
One 15-ounce bag frozen shoestring French fries
1 tablespoon olive oil
2 cloves garlic, grated on a rasp grater
Freshly cracked black pepper
1/4 cup chopped fresh Italian parsley leaves
Mayonnaise, for dipping

Steps:

1 1/2 pounds ground chuck (80% meat, 20% fat)
1 1/2 teaspoons kosher salt
1 teaspoon ground cumin
Freshly ground black pepper
1 cup jalapeño jelly
1/4 cup fresh cilantro, roughly chopped
1/4 cup fresh dill, roughly chopped
1/4 cup fresh mint, roughly chopped
1/4 cup fresh Italian parsley, roughly chopped
2 scallions, white and green parts, finely chopped
1 jalapeño, finely chopped, seeds included
4 hamburger buns, warmed in foil over the indirect heat of the grill for 15 minutes
4 slices pepper jack cheese
Lime wedges, for spritzing
4 handfuls jalapeño-flavored kettle chips
2 avocados, mashed and seasoned with salt

Steps:

  • For the patty. In a large bowl, add the beef and gently break it up so it isn't in one big lump. High over the top, sprinkle the salt, cumin and a few nice grinds of black pepper. 2 tablespoons vegetable oil
Kosher salt and freshly ground black pepper
3/4 cup whole-fat plain Greek yogurt
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh dill
2 tablespoons chopped fresh mint
2 tablespoons chopped fresh parsley
2 scallions, finely chopped (white and green parts)
Kosher salt and freshly ground black pepper

1/2 cup heavy cream or milk
1 1/2 cups shredded Italian cheese blend
1/2 cup of the yogurt mixture, from above

1 tablespoon olive oil
1 pound spicy Mexican chorizo, casing removed
1 Vidalia onion, chopped
4 cloves garlic, slivered
Kosher salt and freshly ground black pepper
1 bottle dry white wine

  • Working, 1 at a time, scrub any grit from shells under running water. Discard open mussels that do not close with a few taps of the finger and any with cracked shells. Put the mussels in a bowl of cold water.
