1/2 cup sugar
4 tablespoons lemon juice
1 1/2 teaspoons curry powder
1/2 teaspoon salt
1/2 teaspoon pepper

1 cup corn flake crumbs
1 chicken (cut up) or 1 assorted chicken piece, your choice

Steps:

  • Put first 7 ingredients in small covered container.
  • Let sit overnight, at room temperature.

1 tablespoon Worcestershire sauce
Zest and juice of 1 lemon
8 to 10 sprigs fresh thyme
One 8-ounce can lemon-lime malt beverage
Kosher salt and freshly ground black pepper
1 whole chicken
1/4 cup olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Make the glaze: Combine the honey, Worcestershire sauce, lemon zest, lemon juice, thyme, 4 ounces of the malt beverage, a pinch of salt and way more pepper than normal in a saucepan on medium heat. Cook until slightly reduced and glaze-worthy, about 5 minutes.
  • Prepare the chicken: Pat the chicken dry all around, then pat it dry again. Rub with the oil all over and sprinkle with salt and pepper. Place the chicken over the can, through the back end with the neck up. Place in a small pan.
  • Grill and glaze the chicken. Heat a grill for cooking with indirect heat to 325 degrees F.
  • Place the pan over the side of the grill with indirect heat and cook, brushing the chicken with the glaze every 20 minutes, until the internal temperature is around 155 degrees F, about 1 hour, 15 minutes. Remove and slightly tent with aluminum foil to rest and let the temperature rise to 165 degrees F, about 15 minutes. Carve and serve.

1 lemon
1/2 cup chopped white onion
1/4 teaspoon red chile flakes
1 tablespoon olive oil
Kosher salt and coarsely ground black pepper
3 cloves garlic, minced
1/2 cup lemon curd
1/4 cup chicken stock
1 tablespoon Worcestershire sauce
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh thyme
1/2 cup finely chopped fresh parsley

Steps:

  • Zest the lemon, then cut it in half and supreme/section it. Squeeze the juice of the remaining lemon center into a small bowl.
  • In a medium pot on medium heat, add the onions, red chile flakes, olive oil, a nice pinch of salt and plenty of coarsely ground black pepper. Cook, stirring, until the onions are tender, 5 to 8 minutes. Add the garlic, lower the heat and stir the garlic into the onions until lost and fragrant. Add the lemon zest and juice, lemon curd, chicken stock, Worcestershire, rosemary and thyme to the pot. Bring to a simmer and cook, stirring, until thickened, another 3 to 5 minutes. Gently stir in the parsley and lemon sections. Season with salt and pepper.

1/2 cup plain low-fat yogurt
1/3 cup purchased mango chutney (such as Major Grey's)
2 tablespoons chopped fresh cilantro
4 boneless skinless chicken breast halves
1/2 cup fresh lemon juice
3/4 cup sesame seeds
4 large garlic cloves, minced
4 teaspoons curry powder

Steps:

  • Blend yogurt and chutney in processor. Add cilantro and process 5 seconds. Transfer sauce to small bowl. (Can be prepared 1 day ahead. Cover and chill.)
