As a single person, I can't eat 8 portions at one sitting, so I divide and freeze. But it's great if family visits, because I can have the portions ready to reheat, and it's also great if you're in a hurry in the morning and don't have time to cook before heading off to work.

8 frozen hash brown patties
2 (6 ounce) packages Canadian bacon, quartered
4 cups shredded Cheddar-Monterey Jack cheese blend
1 ¾ cups egg substitute (such as Egg Beaters® Southwestern Style)
1 cup 2% milk
½ teaspoon salt
½ teaspoon ground mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Arrange hash brown patties in a single layer in the prepared baking dish; top with Canadian bacon. Sprinkle Cheddar-Monterey Jack cheese over Canadian bacon.
  • Whisk egg substitute, milk, salt, and mustard together in a bowl; pour over cheese layer. Cover dish with aluminum foil.

2 cups Fancy shredded

1/2 cup Red pepper, medium

  • 1.Preheat oven to 325deg. 2. In a medium bowl, whisk together eggs, milk, ground mustard and salt and pepper to taste; set aside. 3. Cook bacon in a large saute pan until crisp; drain. Cut into 1" pieces and set aside. 4.Cook crubled sausage in a large saute pan over medium heat until cooked though; drain and set aside. 5. Generously spray a 9x13" baking dish witb cooking spray. 6. Layer half of the bread cubes, bacon, sausage, cheese, peppers and scallions into the baking dish; repeat layers with remaining ingredients. 7. 1 (16 ounce) can crushed tomatoes
1 beef stock cube
1 onion, diced
1/2 lb bacon, cut into bite size pieces
3 cloves garlic, crushed
8 ounces mushrooms, sliced.
salt, to taste
pepper, to taste
1 dash dried basil
1 dash Worcestershire sauce
1/4 cup red wine, for flavour of course

2 Tsp Dijon Mustard
1/4 Tsp Ground Pepper
1 Bag (20oz) Refrigerated O'Brien Hashbrowns (about 4 1/2 Cups)
1 1/2 Cups Shredded Sharp Cheddar Cheese (6oz)

Steps:

  • Spray 13x9 (3 qt) baking dish with cooking spray. In 8 inch skillet, cook sausage (bacon) over medium high heat until no longer pink; drain.
