FILLING:
1 can (20 ounces) crushed pineapple, drained
2 cups sugar
3-1/2 cups sweetened shredded coconut (about 10 ounces)
1 cup sour cream
1 carton (8 ounces) frozen whipped topping, thawed
Additional coconut, toasted, optional

Steps:

  • In a large bowl, combine the first six ingredients; beat on low speed for 30 seconds. Beat on medium for 2 minutes., Pour into three greased and floured 9-in. round baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., In a large bowl, combine the pineapple, sugar, 3-1/2 cups coconut and sour cream. Set aside 1 cup for frosting. Place one cake on a serving plate; top with a third of the remaining pineapple mixture. Repeat layers twice. , Fold whipped topping into the reserved pineapple mixture. This is my interpretation of a virgin sunset. I also refer to this as a pineapple, orange, cherry cocktail. The grenadine will sink to bottom causing layering of orange and red, hence, 'sunset.' If you wanted to make this alcoholic, a shot of champagne is my favorite, but tequila and vodka are other good alternatives. Flavored schnapps may also be an interesting mix.

1 packet sazon seasoning
1/2 cup warm water
3 tablespoons olive oil, divided
1/2 Vidalia or sweet onion, chopped
1/2 yellow bell pepper, chopped
1 jalapeno, seeded and chopped
1/4 cup long-grain rice, rinsed and drained
2 cloves garlic, minced
1 teaspoon ground cumin
Salt and freshly ground black pepper
1 (15-ounce) can tomato sauce, divided
1 pound ground beef, 80/20 ratio
8 cubanelle peppers, stalk and seeds removed

Steps:

  • Preheat the oven to 350 degrees F.
  • In a small bowl, dissolve the sazon in warm water and set aside. Warm 2 tablespoons of olive oil in a skillet over medium heat. Add the onion, bell pepper and jalapeno and saute for 5 minutes. Stir in the rice and garlic. When the garlic begins to brown, add the sazon water, cumin, and season with salt and pepper, to taste. Saute until the aromas blend, about 3 minutes more. Remove from the heat, add 1/2 cup of the tomato sauce and set aside to cool slightly, about 5 minutes. Transfer to a large bowl and add the ground beef. Mix until evenly incorporated.
  • Stuff the cubanelle peppers with the ground beef mixture, using the end of wooden spoon to help ensure stuffing is tightly packed in. Brush the outside of the peppers with remaining olive oil and sprinkle with salt and pepper, to taste. Pour the remaining tomato sauce into an 11 by 9-inch baking dish and arrange the stuffed peppers in the dish. Bake until the peppers are golden brown and the internal temperature registers 140 degrees F on an instant-read thermometer, about 50 to 60 minutes.

1 white onion, chopped
4 cups beef stock
One 12-ounce beer (I like Corona or a pilsner here)
1/2 cup gochujang
2 packages ramen noodles (save the flavor packets for another use)
4 sunny-side up eggs
4 scallions, white and green parts, chopped
4 lime wedges

Steps:

  • For the beef: In a large pot on medium-high heat, add the oil. When it begins to glisten, add the beef, red chile flakes, salt and onions all at once. Cook, stirring constantly, until the beef is done, 5 to 8 minutes. Remove to a plate, leaving the bits and fat in the pot.
  • For the soup: Add the stock, beer and gochujang to the pot and stir to combine. Heat until the mixture begins to simmer, then add the ramen noodles. Cook until the noodles are tender but not mushy, about 3 minutes.
  • Pour the soup into 4 wide bowls. Mound on equal amounts of ramen noodles and beef. Top each with an egg and scallions. Serve with a lime wedge for spritzing.

1/4 cup flour, sifted
2 red snapper fillets, about 1 1/4 pounds combined, scaled, skin left on
1/8 cup olive oil
1/4 cup clarified butter
2 large tomatoes, skinned, seeded, and quartered
1 clove garlic, smashed
1/2 teaspoon dried tarragon, divided
4 teaspoons snipped fresh dill
1 tablespoon chopped fresh parsley
3 ounces Pernod
2 tablespoons white wine vinegar with tarragon
Freshly ground salt, to taste
Freshly ground pepper, to taste
2 tablespoons butter

Steps:

  • Season flour with salt and pepper. Dredge both sides of fillets in flour. Shake off surplus flour.
  • Heat saute pan over medium heat. Add olive oil and 1/4 cup clarified butter. Add fillets, flesh side down, to pan. Cook 6 minutes. Turn, and cook the other side for 4 minutes. Remove fish from pan to platter. Strain cooking juices and set aside. Return fillets to pan, flesh side up.
  • Meanwhile, in another pan, add remaining clarified butter. On medium-low heat, add tomatoes. Then add garlic. Stir gently. Stir in 1/4 teaspoon tarragon, 1 teaspoon dill, and the parsley. Add 1-ounce of Pernod, wine vinegar, and salt and pepper. Simmer gently. Add fish juices. Increase heat to high.
  • Season fish fillets with remaining dill and 1/4 teaspoon tarragon. Add remaining Pernod to pan with fish and set aflame.
  • Stir in butter to sauce and pour over fish. Remove from heat, slide onto platter, and serve immediately.
