1/2 cup cold milk
1 teaspoon vanilla extract
1 package (8 ounces) cream cheese, softened

All-purpose flour, for work surface
14 ounces best-quality thawed frozen puff pastry, such as Dufour
1 large egg
1 tablespoon heavy cream
Fine sanding sugar, for sprinkling
8 to 10 small ripe plums, halved, pitted, and cut into 1/2-inch-thick wedges or 4 cups whole small or sliced large strawberries
1/4 cup honey
Finely grated zest of 1/2 lime, plus 1 to 2 tablespoons fresh lime juice
Pinch of coarse salt

Steps:

  • Preheat oven to 375 degrees. Unfold dough on to a lightly floured surface (if needed, roll out to about 13 inches square). Trim edges, and cut dough into twelve 3-by-4-inch rectangles. Transfer to a baking sheet lined with parchment paper. Score a 1/2-inch border inside each rectangle (do not cut all the way through). Refrigerate 15 minutes.
  • Whisk egg and cream in a small dish. Brush onto dough borders, and sprinkle with sugar. Bake, rotating once, until puffed, golden, and cooked through, 25 to 30 minutes. Transfer to a wire rack; let cool completely. Remove puffed insides from within cut border, leaving a thin bottom crust; discard insides. Shells can be stored in an airtight container at room temperature up to 2 days.
  • Stir together fruit, honey, lime zest and juice, and salt in a medium bowl. Let stand 30 minutes. Just before serving, divide fruit mixture among pastry shells. Drizzle with juice from bowl.

20 (3 inch) unbaked tart shells
⅓ cup butter, softened
1 ¼ cups brown sugar
½ cup honey
1 egg
1 tablespoon lemon juice
1 tablespoon cold water
½ teaspoon vanilla extract
1 pinch salt
1 cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place pastry shells on a baking sheet.
  • Beat butter with an electric mixer in a bowl until smooth and creamy; beat in brown sugar and honey. Beat egg, lemon juice, water, vanilla, and salt into butter mixture just until combined; stir in raisins. Fill tart shells 1/2-full with butter mixture.

1 recipe Pate Brisee for Fruit Tarts
1 recipe Lime Curd
1 ripe mango, peeled and cut away from pit
1/2 recipe Pastry Cream for Fruit Tarlets
1 pint fresh raspberries
Confectioners' sugar for dusting

Steps:

  • Heat oven to 400 degrees. Roll the dough on a lightly floured surface 1/8 inch thick. Fill twelve 1 3/4-by-4-inch barquette tartlet molds and twelve 1 3/4-by-3 3/8-inch rectangular molds. Chill at least 30 minutes.
  • Line the tart shells with a second mold, gently pressing the second mold into the dough; bake 15 minutes. Remove top mold; reduce oven to 350 degrees. Return tart shells to oven, and bake until golden, about 7 minutes. Remove from oven; place on a rack until completely cool.
  • For the raspberry tarts, fill 12 barquette tart shells with pastry cream. Arrange raspberries on top, and dust with confectioners' sugar.
  • For the mango tarts, pour the lime curd into the rectangular shells. Thinly slice the mango, and arrange over the curd. Serve.

4 ounces Shortcrust Pastry, recipe follows
2 ounces dark chocolate, melted
4 ounces cream cheese, at room temperature
1 tablespoon double cream
1/2 ounce caster (superfine) sugar
Vanilla essence
Fresh fruit (strawberries, raspberries, sliced peaches, etc.)
Apricot jam or red currant jelly, melted and sieved, to glaze
115g/4 ounces plain (all-purpose) flour
Salt
25g/1 ounce butter
25g/1 ounce lard
1 tablespoon freshly grated Parmesan cheese (optional)
Cold water

Steps:

  • Line tartlet tins with the pastry (use boat-shaped tins if you have them). Bake blind in a preheated oven at 375 degrees for 10 minutes. When cold, brush the inside of the tartlet cases with the melted chocolate and leave to harden.
  • Mix together the cream cheese and double cream until very smooth, then add the sugar and vanilla essence. Fill the tartlet cases with the cream mixture and arrange the fruit on top. Brush with the apricot or red currant glaze, depending on the fruit used, and leave to set.
  • Sift the flour and salt together and rub in the butter and lard until the mixture resembles bread crumbs. Add the cheese, if using, and bind with a little cold water. Chill for 30 minutes and then roll out and use as above.

Honeyed Peach Tartlets image

1/4 cup water
2 tablespoons plus 6 teaspoons honey
2 tablespoons plus 6 teaspoons sugar
2 teaspoons vanilla extract
3 peaches, peeled, halved, pitted
1 sheet frozen puff pastry (half of 17 1/4-ounce package), thawed
1 egg, beaten to blend
3/4 chilled whipping cream
1 tablespoon honey
1 teaspoon vanilla extract

Steps:

  • Combine water, 2 tablespoons honey, 2 tablespoons sugar and vanilla in medium skillet. Stir over medium-low heat until sugar dissolves. Add peach halves; cover and simmer 3 minutes. Turn peaches over; cover and simmer until just tender, about 3 minutes longer. Using slotted spoon, transfer to plate. Cool. Simmer syrup until reduced to 3 tablespoons, about 2 minutes.
  • Preheat oven to 400°F. Line large baking sheet with foil. Roll out pastry on floured surface to 17x11-inch rectangle, and 1/8-inch thick. Cut into six 4 1/2x5 1/2-inch rectangles. Cut off 1/2-inch-wide strip from each side of 1 rectangle. Brush strips with beaten egg. Place 2 long strips, egg side down, atop long edges of rectangle. Place short strips, egg side down, atop short edges, trimming to fit. Repeat with remaining rectangles.
  • Place pastries on baking sheet. Spread 1 teaspoon honey over bottom of each. Slice each peach half thinly; fan slightly. Place 1 half in center of each pastry. Top each with 1 teaspoon sugar.
  • Bake tartlets until crust is golden, about 25 minutes. Immediately transfer to rack; cool. Rewarm syrup until liquefied. Brush peaches with syrup.
  • Beat cream, honey and vanilla in bowl to soft peaks. Serve tartlets with honey cream.

8 oz nonfat vanilla yogurt, warmed to room temperature
8 oz Neufchâtel (a lower-fat variety of cream cheese)
1 tsp vanilla extract
1 1/2 cups pitted cherries and mixed berries (such as raspberries, blackberries, blueberries and sliced strawberries)
1 tbsp Grand Marnier, rum, or Kahlúa (optional)

Steps:

  • Preheat oven to 400°F. Place a sheet of phyllo on a flat surface such as a cutting board; spray lightly with spray and sprinkle with 1 tbsp sugar. Cover with another sheet of phyllo. Repeat three times, finishing with spray and sugar. Using a pizza cutter or a very sharp knife, cut the phyllo into 3-inch squares. Place each square in a cup on a muffin tin, pressing in gently and fanning phyllo layers so corners don't overlap. Bake 7 to 10 minutes or until golden. Whip yogurt in a small bowl. Fold in Neufchâtel and vanilla (and liquor, if desired). Cover and refrigerate 10 minutes. After cups have cooled, remove them from muffin tin. Add 1 tbsp yogurt mixture to each cup.
