Yield 6-8 serving(s)

Number Of Ingredients 5

8 eggs, separated
1 cup sugar
1 cup heavy cream
1 tablespoon instant coffee (optional)
8 ounces dark chocolate

  • In a blender combine egg yolks and sugar, mix for 2 minutes.
  • Add chocolate and Heavy cream and coffee, blend for 2 minutes.
  • Add egg whites and blend for 4 minutes.
  • Pour into serving dish and refrigerate for at least 3 hours.

Tips:

  • Use high-quality chocolate. The better the chocolate, the better the mousse will be. Look for chocolate with a cocoa content of at least 70%.
  • Make sure the chocolate is finely chopped. This will help it melt smoothly and evenly.
  • Don't overbeat the egg whites. Overbeaten egg whites will make the mousse tough and rubbery. Beat them just until they are stiff and glossy.
  • Fold the egg whites into the chocolate mixture gently. Overmixing will deflate the egg whites and make the mousse less fluffy.
  • Chill the mousse before serving. This will help it set and develop its full flavor.
