ITALIAN CHOPPED SALAD

Categories     side-dish

Time 30m

Yield 6 to 8 servings

Number Of Ingredients 14

1/2 cup red wine vinegar
2 tablespoons honey
1 teaspoon dried Italian seasoning
2 cloves garlic, smashed and chopped
Salt and freshly cracked black pepper
1/2 cup olive oil
1 pound bacon
2 cups ditalini pasta, cooked al dente and cooled
1 cup crumbled gorgonzola
2 hearts romaine, chopped
1/4 small head red cabbage, chopped
1/4 head iceberg, chopped
1 to 2 large tomatoes, chopped
1/2 small red onion, minced

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
  • For the dressing: Place the vinegar, honey, Italian seasoning, garlic and some salt and pepper in a blender or food processor. While the machine is running, slowly drizzle the olive oil until the dressing is combined and emulsified. Adjust the seasoning if necessary, or add more oil if you want it less acidic.
  • For the salad: Lay out the bacon in rows on the prepared baking sheet. Place in the oven on the upper rack and cook until crisp, 10 to 15 minutes. Once it is nice and crispy, chop it up for your salad.
  • In a large bowl, combine the bacon, pasta, gorgonzola, romaine, cabbage, iceberg, tomatoes and red onions. Add the dressing and toss together until all is well coated. Taste and adjust the seasoning.

Tips:

  • Prep all your ingredients ahead of time: This will make assembly much faster and easier, especially if you're making the salad for a party or potluck. Simply wash, chop, and store your ingredients in airtight containers until you're ready to use them.
  • Use a variety of textures and flavors: This will create a more interesting and satisfying salad. Some good options include crunchy vegetables like carrots and celery, soft vegetables like tomatoes and cucumbers, salty ingredients like olives and capers, and flavorful ingredients like herbs and spices.
  • Make a flavorful dressing: The dressing is what really brings a chopped salad together. Be sure to use high-quality ingredients, such as extra virgin olive oil, balsamic vinegar, and fresh herbs. And don't be afraid to experiment until you find a dressing that you love.
  • Don't overdress the salad: A little dressing goes a long way. Overdressing the salad will make it soggy and unappetizing. Instead, start with a small amount of dressing and add more to taste.
  • Serve the salad immediately: Chopped salad is best when served fresh. If you need to make it ahead of time, store the salad in an airtight container in the refrigerator for up to 3 days. However, the fresher the salad is, the better it will taste.

Conclusion:

With its abundance of fresh vegetables, flavorful dressing, and variety of textures, this Super Italian Chopped Salad is a delicious and refreshing dish that is easy to make and perfect for any occasion. It's a great way to get your daily dose of fruits and vegetables, and it's also a great way to impress your friends and family. So next time you're looking for a quick and easy salad that is packed with flavor, give this recipe a try. You won't be disappointed.
